Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Whisk together the flour, baking powder, salt, sugar, thyme, savory, kelp, parsley, and basil in a large bowl.
  • Cut in the butter with a knife or pastry blender until the mixture resembles coarse crumbs. Drizzle the buttermilk slowly over the flour mixture while tossing lightly with a fork, just until the flour mixture is moistened. Turn the dough out onto a floured board, and knead 4 to 5 times. Pat the dough into a circle, 3/4 inch thick, and cut biscuits with a 2 inch cookie cutter. Place biscuits 2 inches apart on a baking sheet.
  • Bake in the preheated oven until golden brown, about 8 minutes. Serve warm.

The unbaked biscuits can be frozen: freeze biscuits in a single layer and transfer to resealable plastic bag for up to one month. Bake straight from the freezer, adding a few minutes to the cooking time. The herb-and-cheese combination is infinitely variable - try cheddar and minced chives or chopped rosemary and Parmesan.;)

Herb-Gruyere Biscuits image

Steps:

  • Preheat the oven to 425°F and position a rack in the lower third of the oven.
  • In a large shallow bowl, whisk the flour, baking powder, baking soda and fine salt.
  • Add the chilled butter and use a pastry blender or 2 knives to cut the butter into the flour until it is the size of peas.
  • Add the chopped thyme and sage, and the Gruyere.
  • Stir in the buttermilk just until the dough is moistened.
  • Lightly dust a work surface with flour.
  • Turn the dough out onto the surface and knead 2 or 3 times, just until it comes together.
  • Pat the dough into a 1/2-inch-thick disk.
  • Using a floured 2 1/4-inch round cookie cutter, stamp out biscuit rounds as closely together as possible.
  • Gather the scraps and knead them together 2 or 3 times, then flatten the dough and stamp out more biscuit rounds.
  • Pat the remaining scraps together and gently press them into a biscuit.
  • Transfer the biscuits to a large baking sheet and brush the tops with the melted butter.
  • Lightly sprinkle the biscuits with a few grains of flaky salt and chill until firm, about 10 minutes.
  • Bake the biscuits for 20 minutes, or until golden.
  • Let the biscuits cool slightly on the baking sheet before serving.

Biscuits with Herb Breakfast Sausage Gravy image

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Pour milk into a measuring cup and add vinegar; set aside until milk curdles, 5 to 10 minutes.
  • Whisk together flour, baking powder, baking soda, sea salt, oregano, basil, and thyme in a large bowl. Cut in cold butter using a pastry cutter until mixture resembles coarse crumbs.
  • Make a well in the dry ingredients and stir gently with a wooden spoon while pouring in 1/4 cup curdled milk at a time. Stop adding milk when it resembles a slightly tacky but moldable dough, stirring until just combined. You may not need all of the milk.
  • Turn mixture onto a lightly floured surface, dust the top with a bit of flour, and then very gently turn the dough over on itself 5 to 6 times. Form dough into a 1-inch thick disc, handling as little as possible.
  • Using a 1-inch thick dough cutter, push straight down through the dough, then slightly twist. Repeat and place biscuits on a baking sheet in 2 rows, making sure they just touch; this will help them rise uniformly. Gently reform the dough and cut out 1 or 2 more biscuits.
  • Bake in the preheated oven until fluffy and slightly golden brown, 10 to 15 minutes.
  • While biscuits are baking, cook sausage in a skillet over medium heat until browned, using a wooden spoon to break it up as it cooks, about 5 minutes.
  • Stir butter in a saucepan until melted. Mix in flour, salt, and seasoning. Cook and stir for 1 minute. Whisk in milk and continue cooking and stirring until gravy has thickened. Cook and stir for 1 minute more. If mixture is too thick, add in enough chicken broth until gravy has desired consistency. Serve gravy immediately over split biscuits.
