Steps:

  • Coat 8-inch square baking dish with cooking spray. In large saucepan, bring granulated sugar, butter, heavy cream, and salt to boil over medium heat, stirring frequently. Allow to boil 5 minutes, stirring constantly. Remove from heat and slowly add confectioners' sugar and vanilla, stirring until smooth and well combined. Stir in cherries until evenly distributed. Spoon into baking dish and chill 1 hour, or until firm. Cut into squares and serve, or store in an airtight container. NOTE: If you prefer, leave out candied cherries and you'll have a great vanilla fudge.

  • Line a 9-in. square baking pan with foil. Grease foil with butter; set aside., Combine milk and chips in a large microwave-safe bowl. Microwave, uncovered, on high for 1 minute; stir. Cook 30-60 seconds longer, stirring every 30 seconds, or until chips are melted. Stir in the pecans, raisins and vanilla. Transfer to prepared pan. Cover and refrigerate for 2 hours or until firm., Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container.
