- In a food processor or large mixing bowl combine all the dry ingredients.
- Pulse to mix the ingredients or turn your mixer on low to mix well, 1 T at a time add the shortening-mixing well after each addition.
- This will keep for 6 weeks in your fridge, 4 weeks on the shelf.
- To make a pourable crust combine 2/3 cups baking mix with 2 eggs and 1 cup of milk.
- Mix well.
- For biscuits, muffins or pancakes follow the directions in recipe#16813.
ALL-PURPOSE BAKING MIX

- In the bowl of a food processor combine the flour, baking powder and salt. Pulse for 15 seconds. Add the shortening and pulse until the mixture is similar in texture to cornmeal. If you do not have a food processor shift together the flour, baking powder, and salt into a large bowl. Cut in the shortening with a fork or pastry blender until the mixture is similar in texture to cornmeal.
- Use in recipes that call for Bisquick or all-purpose baking mix.
HOMEMADE PANCAKE MIX
A stack of fluffy, homemade pancakes is only minutes away when you have this mix already in your pantry. The recipe yields 9 cups of pancake mix, enough to make 4 batches of the pancake recipe that follows.

- For the pancake mix: Sift the flour, cornstarch, confectioners' sugar, baking powder, baking soda and salt together in a medium bowl then whisk thoroughly to combine. Store pancake mix in an airtight container or resealable plastic bag in a cool, dry place for up to 3 months.
- To make pancakes: Preheat the oven to 200 degrees F. Line a baking sheet with two kitchen towels stacked on top of each other and place in the oven. This will keep your cooked pancakes warm.
- Whisk the milk, butter, vanilla and eggs together in a large bowl. Add 2 1/4 cups pancake mix and whisk vigorously to form a thick batter (it's okay if there are some lumps). Let the batter rest for 5 minutes.
- Heat a large nonstick skillet over medium heat. (Alternatively, heat a nonstick electric griddle to medium.) Ladle about 1/4 cup of the batter onto the skillet, spreading it into a 4 1/2- to 5-inch round; repeat to make a second pancake. (If using a griddle, make as many pancakes as will fit on your griddle plate at one time.) Cook until the pancakes are golden on the bottom and bubbly on top, 45 to 60 seconds. Flip the pancakes and cook until the undersides are golden and the batter is cooked through, 45 seconds more. Transfer the pancakes to the baking sheet in the oven, tucking them between the kitchen towels. Repeat with the remaining batter to make more pancakes. Serve pancakes with butter and maple syrup.

BULK BAKING MIX
This recipe post came about by a mad search! I needed a basic cake mix and just couldn't find the one that I needed...just the dry ingredients...wet to be added in later. I did find a recipe here on Zaar that mentioned a site www.stretcher.com which is where I found this. BUT now I can't find that recipe posting anymore! So for my sanity I am posting this. This makes 25 1/2 cups of cake mix. "Don't overlook the other uses of baking mixes in your home, either. Mixes can be packaged and labeled attractively to be given as gifts. They can be taken along on the family camping trip to add convenience at the campsite, replacing costly prepackaged foods. Mixes are also easily prepared by children, making it simple for them to help in the kitchen. Mix away!"
