KIDS CAN MAKE: HOMEMADE BREAD

Nothing smells better and is more fun and messy than making fresh bread with your kids. Both big and little ones get to measure all the ingredients and squish them together in a resealable bag. Let them take turns kneading the dough, then practice patience as they wait for it to rise, bake and cool.

Steps:

  • Put the milk, sugar, yeast and 1 cup of the flour in a large resealable plastic bag. Squeeze the air out of the bag and seal. Squish with your hands until well mixed. Let it rest for 10 minutes at room temperature; the mixture will begin to bubble.
  • Add the melted butter, salt and remaining 3 1/2 cups flour to the bag, seal and squish again until well blended. Remove the dough from the bag and put it on a floured surface. Knead until smooth, about 5 minutes.
  • Butter a 9-by-5-inch loaf pan and add the dough. Cover with a kitchen towel and put in a warm spot until the dough has just risen about 1 1/2 inches over the top of the pan, 2 to 2 1/2 hours.
  • Position a rack in the center of the oven and preheat to 375 degrees F. Brush the top of the dough lightly with warm water and bake until golden brown, about 35 minutes. Using oven mitts, remove the loaf from the pan and place in the center of the oven rack. Continue baking until the loaf sounds hollow when rapped lightly with your knuckles on the bottom and top, or an instant-read thermometer inserted in the center registers about 190 degrees F, about 30 minutes more. Transfer the loaf to a cooling rack and cool completely before slicing.

1 1/2 cups whole milk, warmed
2 tablespoons sugar
One 1/4-ounce package active dry yeast
4 1/2 cups unbleached all-purpose flour, plus extra for dusting
3 tablespoons unsalted butter, melted, plus extra for buttering the pan
1 tablespoon fine salt

Steps:

  • Pour the warm water into a large bowl, and whisk in 4 teaspoons of bread flour, the yeast, and the white sugar until thoroughly combined and the sugar has dissolved. Allow to stand until the yeast starts to form creamy bubbles, about 5 minutes.
  • Fit a dough blade into a large food processor, and place 3 1/2 cups of bread flour, the oats, whole wheat flour, salt, brown sugar, and vegetable oil into the work bowl. Start the food processor running, and slowly add enough of the water-yeast mixture to allow the dough to form a firm ball and pull away from the sides of the processor, about 1 minute. Process for another 30 seconds to knead.
  • Place the dough into an oiled bowl, and turn to coat the dough with oil. Cover with a damp cloth, and allow the dough to rise until doubled, about 1 hour. Punch down the dough, and divide into 2 equal-sized pieces. Form each piece into a loaf; pinch the seams and ends closed.
  • Grease 2 4x8-inch loaf pans, and place the loaves into the pans with the seam sides down. Allow to rise until the dough is 1 inch above the rim of the pans, about 1 more hour.
  • While dough is rising, preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until the tops are browned, about 35 minutes. Allow bread to cool in pans for 10 minutes, then turn out onto cooling racks to finish cooling.

My Mom's Homemade Bread & Bun Recipe (No Bread Maker) image

Steps:

  • In small bowl place the following ingredients:.
  • 1 cup warm water.
  • yeast and 2 tbsp white sugar (DO NOT STIR).
  • let stand for 10 minutes.
  • In large mixing bowl do the following steps.
  • Place 8 cups warm water in bowl.
  • Place remaining 2 tbsp sugar in water.
  • Place 4 tbsp margarine or veg. oil in water.
  • Place salt in water.
  • Add 6 cups flour one at a time and mix as you are adding. Making sure to remove any lumps. Should be smooth before adding next cup.
  • Pour Yeast mixture in other bowl that you set aside into mixture.
  • Mix until smooth.
  • Continue to add flour mixing thoroughly until dough is sticky and forms a ball (note you will have to use your hands to mix it after its too tough to mix with a spoon. It should take only about a maximum of 17 cups of flour.
  • Take dough out of bowl and place on a flat clean dry surface which was sprinkled with about 1/2 cup of flour. Knead dough with hands for about 15 minutes or so. Dough should be soft and feel light to to touch. TIP: To prevent the dough from sticking to your hands a lot rub vegetable oil on them or take a piece of margarine and rub it into your hands then continue to knead dough. DO NOT ADD MORE FLOUR! It will make your bread dough TOO HEAVY! if you do.
  • Separate dough in half. Place each half in a bowl. Place a light towel over it and let the dough rise for 1 hour or until doubled.
  • FOR BUNS: Take about the size of a baseball of dough in your hand roll into a ball and place it on an ungreased cookie sheet. Let rise for another 1/2 hour or until buns are double in size. For buns to rise tall place them close together almost touching. Bake at 375°F.
  • FOR LOAVES: Take a large amount of dough and roll into a roll dough should not take up more than half of the loaf pan. Make sure dough roll is even or you will end up with a lopsided loaf or narrow loaf. Let rise for 1 to 2 hours. Or until Dough is nicely formed above the rim of the loaf pan. Bake at 350°F for 45 minutes or until golden brown. To test to see if done knock on top of the loaf. If it sounds hollow it is completed baking. It will be a dark golden brown color when finished.
  • Take Loaves out of oven and take them IMMEDIATELY OUT OF THE PANS upside down. (If you leave them till cooled in pans what happens is the bottom crust gets soggy from the condensation). Brush melted butter over top of loaves to prevent from drying out.
  • Yield: 4 loaves 2 dozen buns.
  • Depends on size.
  • TIP: This bread dough is great for anything such as pizza crusts, cinnamon buns, take a bit and roll it out thin and place it in a frying pan with a little oil and fry it and serve with jam or peanut butter.

DELICIOUS HOMEMADE BREAD BY HAND (WHITE OR WHEAT)

This is homemade bread (you can do white or wheat) that doesn't require the use of a bread machine at all. It freezes well and is all around just a great recipe that always impresses and keeps my children asking for more. You can make this with wheat by substituting white flour for wheat and 1/3 cup honey for the sugar. This recipe is EASILY doubled and does perfectly. Enjoy one and freeze the other.

Delicious Homemade Bread by Hand (White or Wheat) image

Steps:

  • Mix yeast and warm water in a large bowl and let sit for 10 minutes. During this time you should see bubbles appear in the water (perfectly normal).
  • Once yeast and water have sat for 10 minutes, add the oil, salt, sugar and 1 cup of flour. Mix with a hand mixer for 2 minutes. After the 2 minutes, stir in the rest of the flour and mix with a large spoon until you can no longer mix by spoon and continue by hand kneading as you go. Once you have all flour completely mixed in, you should have a texture that is NOT sticky and not dry (if it IS sticky add more flour and if it IS dry, add a LITTLE more water until desired consistency is reached). Roll into a dough ball.
  • Place in an oiled boil (must be oiled and not sprayed) and flip one time. Cover with a damp towel and place in warm environment (NOT HOT). What I do is preheat the oven to 170 and then immediately turn off while I'm mixing the dough - this leaves the oven at the perfect temperature to rise. Let rise for 1 hour OR until doubled in size.
  • Remove towel and dough and place dough ona lightly floured surface. Knead the dough and roll out into a large rectangle (you MAY need to lightly flour your rolling pin as well). You will now roll the rectangle back up along the short side (if you roll along the long side it will not fit in your bread pan). Pinch seams together on bottom and on ends and place seem side down into a sprayed full-size loaf pan. Place a damp towel over the loaf pan and put it back into the oven to rise a second time (again no heat on) for 30 minutes.
  • Remove from oven at about 24 minutes and let it rise the last 6 minutes on the counter while you preheat your oven to 370 degrees F.
  • Place uncovered loaf pan into the oven and bake for 30-32 minutes.
  • Cool on wire rack and allow cooling time before cutting. Enjoy!

3 1/2 cups white flour
1 1/3 cups warm water (not hot but not cool either)
2 1/4 teaspoons bulk yeast (or 1 packet of yeast)
3 tablespoons sugar
1/4 cup vegetable oil
1 teaspoon salt

Steps:

  • In the mixing bowl of an electric mixer, stir together 1/2 cup warm water, 1 tablespoon sugar, 1/4 cup bread flour, and yeast. Let grow for about 5 minutes. It will bubble almost immediately.
  • Measure oats, 4 1/2 cups warm water, whole wheat flour, salt, 2/3 cup sugar, and 2/3 cup oil into the mixing bowl. Mix on low speed with a dough hook for 1 to 2 minutes. Increase speed slightly, and begin adding bread flour 1/2 to 1 cup at a time until dough pulls away from sides of bowl. Humidity determines how much flour you need before the bread pulls away from the edge of the bowl. It is normal for the dough to be sticky.
  • Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 1 hour, or until doubled in size.
  • Divide dough into 6 pieces. Shape loaves, and place in greased 8 x 4 inch pans. Let rise until dough is 1 inch above rim of pans, usually 1 hour.
  • Bake at 350 degrees F ( 175 degrees C) for 35 minutes, or until tops are browned. Let cool in pans for 10 minutes, and then turn out onto wire racks to cool completely.

QUICK & EASY HOMEMADE BREAD

I had used different bread recipes over the years, and finally came up with my own. I use this recipe for everything... bread, buns, pizza, cinnamon buns, you name it. It turns out every time, and tastes great. My husband loves when I make dinner rolls with these sprinkled with quick oats or poppy seeds! This is my first time posting a recipe- I really hope someone else likes this easy home-made bread recipe as much as I do!

Quick & Easy Homemade Bread image

Steps:

  • Combine water, yeast, salt, sugar, milk powder, egg, and butter in a large mixing bowl- stir with wooden spoon until well mixed.
  • Slowly add the flour while still mixing- you don't have to add whole wheat flour, but I usually add about a cup just to give it some whole wheat flavor; then the rest can be white flour- you can do half and half also, or just all white- you are the cook, mix it up.
  • Continue to add the flour to the dough (you will have to use your hands to mix it now)
  • Once the dough becomes more of a ball and not so runny, pour the dough out of the bowl onto a floured countertop; knead dough with your hands for 10-15 minutes, adding more flour if needed. Keep adding flour until the dough is JUST sticky when you hold it- but not too sticky- you don't want it stuck to your fingers. Also, if you add too much flour, your bread will become heavy- so watch how much flour you add to your mixture!
  • Shape dough into ball, place in a large bowl lightly rubbed with oil; cover with a light towel- let rise until doubled in size.
  • Separate dough in half; shape into dough roll and place in lightly oiled bread pans. Brush with a beaten egg to give it that nice golden look when it comes out of the oven or brush lightly with water and sprinkle lightly with quick oats or poppy seeds- the possibilities are endless!
  • Let loaves rise for 15-20 minutes- this is a personal choice, some people do not like big loaves of bread, while others do- so keep an eye on how big your loaves get, it is a personal choice of course.
  • Place in a 350 degree oven for 20-30 minutes, or until done.(cooking time varies, depending on oven).
  • Let sit in pans for 5 minutes then take the loaves out and set on wire rack to cool.
  • Its great for toast, sandwiches, or still hot out of the oven as a snack!

2 1/2 cups warm water
1 1/2 tablespoons instant yeast
1 tablespoon salt
1/4 cup sugar
1/2 cup powdered milk
1 egg
1/3 cup butter (or oil) or 1/3 cup margarine (or oil)
6 cups white flour (I dont measure the flour, this is just an estimate- it could be more, it could be less!)
1 cup whole wheat flour

Steps:

  • Combine warm water, yeast, oil and honey in a large bowl, let sit for 5 minutes then add the salt and egg. Stir all together.
  • Add the flour one cup at a time, stirring together after each cup. Around the 5th cup your dough will begin to come together pulling away from the sides of the bowl and forming a ball.
  • Empty the dough onto a clean, floured surface and begin kneading the dough adding a little more flour as it becomes sticky. It should be slightly sticky. Knead for 3-5 minutes until smooth, firm and elastic.
  • Set aside to rise until double.
  • Divide dough into 2 loaves or 1 loaf and 12 rolls or all rolls if you like. Place in well greased loaf pan or rolls on a greased cookie sheet.
  • Preheat oven to 375°F
  • Set aside to rise until almost double once more.
  • Bake loaves for 25-30 minutes, or rolls for 15 minutes. They should be golden brown on top and bottom when done.
