  • In a saute pan, toast the seeds over medium heat for 2 minutes until golden (the pumpkins will pop). Combine the water, honey, and sugar in a saucepan. Over high heat, bring the syrup to 240 degrees F. Add the seeds and bring the syrup to hard crack (250 degrees F). Spritz a cookie sheet with non-stick spray and pour the syrup onto it. After a few minutes, score the candy into 2 by 1/2-inch bars. Let harden, and then cut into bars.

1/4 cup pumpkin seeds (shelled)
1/4 cup sunflower seeds (shelled)
2 tablespoons water
1/2 cup honey
1/2 cup sugar

Add the baking soda, and with a wooden spoon, stir in gently. It will foam up a lot. Pour the mixture onto a silpat or a piece of parchment paper on a sheet pan, and let cool. Break into pieces.

  • Cover a baking tray with greaseproof paper. Set aside.
  • Mix the sugar, syrup, and honey together in a saucepan.
  • Turn up the heat and slide a thermometer into the mixture. Heat till the sugar mixture reaches 275°F (140°C) and is brown and bubbling.
  • Take the thermometer out and quickly whisk in the bicarbonate of soda.
  • Pour the honeycomb into the prepared tray and leave to set. Do not touch the honeycomb at all throughout.
  • Once set, smash up the honeycomb into bite-size pieces.
  • Dip into the melted chocolate and chill.
  • Enjoy!

Steps:

  • Combine the first 3 ingredients and cook slowly on medium heat until it forms a hard ball when you drop it into ice water. It took me about an hour. As the mixture gets close to being done, the bubbles from the boil will get a lot smaller and closer together. Pour the mixture onto a buttered cooking sheet. When cooled, pull with buttered hands. Stretch, twist and pull until firm (this is the fun part! ;)) and then form into long ropes and place on waxed paper. Cut into bite size pieces. If you want, you can roll them in powdered sugar and wrap them in wax paper.

  • Butter a 20cm square tin. Stir the caster sugar and golden syrup together in a deep saucepan over a gentle heat until the sugar has melted. Try not to let the mixture bubble until the sugar grains have disappeared.
  • Once completely melted, turn up the heat a little and simmer until you have an amber coloured caramel (this won't take long), then as quickly as you can, turn off the heat, tip in the bicarbonate of soda and beat in with a wooden spoon until it has all disappeared and the mixture is foaming. Scrape into the tin immediately - be careful, the mixture will be very hot.
  • The mixture will continue bubbling in the tin, simply leave it and in about 1 hr-1 hr 30 mins the honeycomb will be hard and ready to crumble or snap into chunks.

  • Butter a 9x13 inch baking dish.
  • In a medium saucepan over medium heat, combine sugar, corn syrup and vinegar. Cook, stirring, until sugar dissolves. Heat, without stirring, to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads.
  • Remove from heat and stir in baking soda. Pour into prepared pan; do not spread. (Mixture will not fill pan.) Allow to cool completely.
