HOMEMADE MARSHMALLOW FLUFF
I love marshmallow fluff but one day I couldn't find any. I found this recipe in a really old cookbook that my mom had. Love it!!! Of course, it's easier to buy premade but this tastes better!!

Steps:
- In a large bowl, combine egg whites, corn syrup and salt.
- Mix with mixer on high speed for 10 minutes (or until thick).
- Add in icing sugar.
- Beat on low speed until well blended.
- Add vanilla and mix until blended.
- It's now ready to use or store.
- *To make strawberry fluff, substsitute strawberry falvoring for the vanilla and add one or two drops of red food coloring.
- This recipe may be frozen for later use.
- Remove from freezer and stir until fluff is mixed.
- It can be kept in the refrigerated for up to 1 week,.
- Stir well with a spoon before serving.
- **You can use this in any recipe that calls for marshmallow creme/fluff.

FANTASTIC MARSHMALLOW FLUFF CLONE
This is a fantastic clone for the store-bought marshmallow fluff and one I have used for years, it's easy to make and so much cheaper than the store-bought, I always use this instead of the real thing and it freezes well also, see note on bottom --- use this in any recipe calling for marshmallow fluff, I have also made this using dark corn syrup it is just a little darker in colour but it works just as well :)

- In a large bowl, combine egg whites, corn syrup and salt; beat with mixer in high speed for 10 minutes or until thick.

- *NOTE* This recipe makes a lot of fluff, but may be frozen for later use, just remove from freezer and stir well with a spoon, or it can be refrigerated for up to 1 week, just make sure to stir well with a spoon before using.
HOMEMADE CHOCOLATE MARSHMALLOW CREAM (FLUFF)
Found at preparedpantry.com, this recipe lets you take your marshmallow cream dreams a step further. Suggestions for use included sandwich cookies + layer cake filling & frosting. I cannot help but think this would also be very good as a simple garnish for spec desserts & a kid-pleaser after-school snack when spread on a flour tortilla filled w/banana slices. *ENJOY* (Times & servings were not given & have been estimated. Time for mixture to cool was not included.)

- In a very clean glass or metal bowl, beat the egg whites & cream of tartar till light & foamy.
- W/the mixer still running, sprinkle in the 2 tbsp of sugar, cont beating till soft peaks form & set aside.
- In a sml saucepan, mix the water, corn syrup & granulated sugar together. Cook over med heat till it boils & comes to the firm ball stage (246°). Do not overcook.
- Drizzle the hot syrup into the egg whites w/the mixer running on low.
- Turn the mixer to high & beat for 5-6 min or till the sauce is very fluffy & the consistency of marshmallow cream. Beat in the extract & cocoa.
- NOTE: Allow the mixture to cool completely b4 using or refrigerate for later use.

HOMEMADE MARSHMALLOWS 2.0

- Sift the cornstarch and confectioners' sugar together into a medium bowl.
- Place a 9-by-13-inch metal baking pan over a clean kitchen towel and lube generously with nonstick spray. Then, thoroughly dust with one-third of the cornstarch-sugar mixture, tapping and angling the pan to ensure complete coverage all the way up the sides. Return any excess mixture to the bowl for later use. Set pan aside.
- Pour 1/2 cup of water into your mixer's work bowl and sprinkle the gelatin over the water. Leave to bloom for 5 minutes. If after 5 minutes you still see dry gelatin, drizzle on just enough additional water to moisten, then set aside for another two minutes. Go ahead and install the bowl onto the mixer and attach the whisk.
- Meanwhile, combine 1/2 cup water, the granulated sugar, corn syrup, and salt in a 2-quart saucepan. Place over medium-high heat, cover, and cook until the mixture begins to simmer around the edges of the pot, about 4 minutes. (Yes, you'll have to peek occasionally under the lid.) Uncover and continue to cook, without stirring, until the mixture reaches 240 degrees F, approximately 8 more minutes. If you notice sugar crystals forming on the sides of the pot, use a wet pastry brush to wash down the crystals. When the syrup reaches 240 degrees F, immediately remove from the heat.
- Turn the mixer to low and SLOWLY and CAREFULLY pour the hot syrup down the side of the bowl into the gelatin mixture. Do not pour it directly onto the whisk. Once you have added all of the syrup, gradually increase the speed to high and continue whipping until the mixture increases several times in volume, thickens, and the bowl feels just warm to the touch, 13 to 14 minutes in my kitchen. Then, with the mixer still running, add the vanilla and continue beating for another 30 seconds to incorporate. Reduce the speed to stir and gradually lift the mixer head to dislodge most of the marshmallow from the whisk. Turn the mixer off.
- Quickly transfer your new fluff to the prepared pan, using a spatula lubed with nonstick spray to spread it evenly. The marshmallow will set up quickly, so don't dawdle. Dust the top with enough of the remaining sugar and cornstarch mixture to lightly cover and allow the marshmallow to sit uncovered for at least 3 hours or, better yet, overnight.
- Loosen the marshmallow from the sides of the pan using a small spatula or butter knife. Turn the marshmallow out onto a cutting board and dust with a little more of the sugar-cornstarch mixture. Cut into squares using a pizza cutter or sharp knife rubbed with oil. I usually get 24 big marshmallows, but you can also cut smaller cubes for "mini" marshmallows that are perfect for hot cocoa. Once cut, lightly dust all sides of each marshmallow with the additional cornstarch-sugar mixture. Consume right away or store in an airtight container for weeks, if not months.

- Beat egg whites and cream of tartar together until light and frothy.
- With mixer running slowly, add 2 Tbls sugar, beating until soft peaks form.
- In a small saucepan, combine 1/3 cup water, corn syrup and remaining 2/3 c of sugar.
- Cook over medium heat until boiling.
- Cook, stirring, until mixture reaches the firm ball stage (between 242 F and 248 F), about 6 minutes.
- Immediately remove from heat.
- With mixer on low, slowly add hot syrup to egg white mixture.
- Increase mixture speed to high and continue beating for 5 minutes.
- Add vanilla and continue to beat until mixture looks like marshmallow cream, about 1 minute more.
- Store in glass jar with air-tight lid on countertop.
