SHEET PAN PIZZAS
It's time for a pizza party and with my sheet pan pizzas: you'll be able to satisfy all of your guests' cravings whether they go for veggie pizza, classic pepperoni or my personal favorite-- barbecue chicken pizza. Prepared pizza dough dressed up with other store-bought ingredients means this meal comes together quickly.

Steps:
- Preheat the oven to 450 degrees F. Grease 3 large rimmed baking sheets. Place one dough ball in each baking sheet, and stretch and press the dough to fit into the pan.
- For the BBQ Chicken Pizza: Toss 1/4 cup of the barbecue sauce with the chicken. Spread the remaining 1/2 cup barbecue sauce over one pizza dough. Top with the chicken, red onion, cilantro and cheese.
- For the Pepperoni Pizza: Spread the pizza sauce over another pizza dough. Top with pepperoni and cheese.
- For the Veggie Pizza: Spread the pizza sauce over the third pizza dough. Top with mushrooms, both bell peppers, spinach and cheese.
- Bake all of the pizzas until the crusts are browned and crispy and the cheese is melted, rotating the pans as needed to cook the pizzas evenly, 20 to 25 minutes. Let the pizzas stand 5 minutes before cutting. Drizzle the BBQ Chicken Pizza with additional barbecue sauce and sprinkle with cilantro, if desired. Sprinkle the Pepperoni Pizza with fresh basil.
SHEET-PAN PIZZA DOUGH

Steps:
- Combine the flour, sugar, salt and yeast in a stand mixer fitted with the dough hook. Combine the hot water and 2 tablespoons olive oil, then add to the mixer on low speed and mix until a loose ball forms. (You can also do this by hand: Combine the dry ingredients in a large bowl. Make a well in the center, then add the water and oil and stir with a wooden spoon.)
- Knead the dough with the mixer on medium-high speed until smooth and slightly tacky, about 7 minutes. (If using your hands, bring the dough together into a ball, then turn out onto a smooth surface and knead, dusting your hands and the surface as needed with flour, until the dough is smooth and slightly tacky, about 5 minutes.)
- Pour the remaining 1/3 cup olive oil into an 11-by-17-inch rimmed baking sheet or black steel pan. Transfer the ball of dough to the pan, turning to coat with the oil. Cover loosely with plastic wrap and let rise in a warm place until the dough fills about two-thirds of the pan, 1 1/2 to 2 hours.
- Slide your hands under the dough and lift, gently stretching the dough to fit the pan. (It's OK if it doesn't stretch to the corners.) For the final rise, cover the dough with plastic wrap and set aside until slightly puffy, 30 to 45 minutes. Top and bake as directed.
FRY PAN PIZZA
Steps:
- Preheat oven to 425 degrees F.
- Roll dough into a 14-inch round. Brush a 14-inch skillet with olive oil and sprinkle with Italian seasoning. Lay dough out in pan. Spread with sauce. In a bowl, mix the sausage and dip until sausage is coated. Spread mixture evenly over pizza. Top with mozzarella. Bake until cooked through, about 30 minutes. Serve.
SHEET-PAN CHEESE PIZZA
If you want to feed a crowd or are looking for low-effort homemade pizza, this is the right choice. The dough rises on an oiled sheet tray so no need for transferring dough. For the lightest, fluffiest crust, try not to press down on the dough to stretch, but run your hands under the dough and gently pull with your fingertips instead. Placing cheese before sauce on the crust when assembling prevents a soggy bottom.

- Make the dough: Sprinkle the yeast over the hot water in a small bowl. Let stand until dissolved and slightly foamy, 5 to 10 minutes.
- Meanwhile, whisk the bread flour, all-purpose flour, sugar and salt in a large bowl and make a well in the center. Pour the yeast mixture into the well and add the olive oil. Stir with a wooden spoon until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface, dust the dough with flour and knead, dusting with more flour as needed, until very smooth and elastic but still slightly tacky, 3 to 5 minutes.
- Transfer the dough to an 11-by-17-inch rimmed baking sheet coated with 3 tablespoons olive oil, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours.
- Make the pizza sauce: Combine the tomatoes, garlic, olive oil, dried oregano, sugar and a pinch each of salt and pepper in a medium bowl; season with more salt and sugar if needed. (Makes about 1 1/2 cups.)
- Make the pizza: Preheat the oven to 450˚ F (use the convection setting, if available) with a pizza stone, baking steel or inverted large baking sheet in the lower third of the oven. Gently stretch and press the dough to cover the pan as much as possible. Let stand 30 minutes, then gently press and stretch the dough again, if needed, to cover the pan. Top the dough with the pizza sauce, Parmesan, grated mozzarella and torn mozzarella.
- Place the baking sheet on the hot stone and bake the pizza until the crust is golden brown, about 20 minutes. Let cool slightly, then remove to a cutting board.

- In small pan, combine water, olive oil and yeast over low heat. Stir occasionally to dissolve yeast; set aside.
- In large mixing bowl (or food processor!) combine flour, cheese, sugar, salt, oregano, and basil, mixing well. Add yeast mixture slowly, mixing until dough forms a ball. Place dough in a greased bowl, cover loosely with saran wrap and let rise for 1 hour. (Dough should double in size).

HOMEMADE PIZZA

- Sieve the strong white flour into a large mixing bowl, add the salt and pepper.
- Add the water, yeast, sugar and olive oil into a jug and leave for 3 minutes to allow the yeast to activate.
- Slowly pour the wet mixture into the mixing bowl while stirring using a wooden spoon until everything is roughly mixed. Then, using your hands, further mix and knead the dough until it is elastic and slightly tacky but not over sticky. Place the dough in the mixing bowl and cover with a damp tea towel and leave for 1 hour until the dough has doubled in size.
- Take the dough and knead it for a few minutes to take some of the air out. Split it into two equal parts. If you are only wishing to make 1 pizza then you can freeze the extra dough.
- For the sauce, put all sauce ingredients into a blender for 30 seconds until you are left with a thick, light red sauce.
- Flour a work surface and using a rolling pin, roll the dough until it is roughly the size of the pizza tray you are using. Place the rolled out dough onto the tray and using your fingers, work the dough until it fills the tray.
- Brush the surface of the dough with olive oil and then add enough sauce mix to cover the base spreading evenly. Sprinkle on the grated cheese followed by your topping choice.
- Cook the pizza in preheated oven at 200C for 20 minutes and then serve.
CHICAGO-STYLE PAN PIZZA
This is the best Chicago-style pizza that I have ever had. Make sure that you use the Parmesan in hard triangle form. It tastes so much better when you grate it yourself.

- Preheat the oven to 350 degrees F (175 degrees C). Press the dough into the bottom and up the sides of a greased 9x13 inch baking dish.
- Crumble the sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Remove the sausage with a slotted spoon, and sprinkle over the dough crust. Sprinkle mozzarella cheese evenly over the sausage.

HOMEMADE PIZZA DOUGH
This is a simple, yet delicious, pizza dough recipe. I have used it for years. Our 4 boys have grown up with this dough as the base for our homemade pizza! Enjoy it plain - or add some basil, oregano, garlic, etc into the dough for extra flavor!

- Mix all dry ingredients together. Mix well. Add oil and water. Mix until flour is well incorporated. Knead 8 or 10 times. Dough should only be slightly sticky. If necessary, add a few more tablespoons flour. Let rest 15-20 minutes so dough can relax. If I have time I let the dough rise for 1-2 hours, then punch down and form into pizza crusts. This helps develop a better flavor, but the dough is still very good if it is used after the short rest period.
- Use a small portion of dough - appropriate for the size of pan you are using to bake the pizza. (One third of the dough if using 8 inch pans) Place dough on a counter, table, or breadboard. Gently press on it, using the tips or your fingers or the palms of your hand, to flatten and stretch the dough. Let dough rest for 2-5 minutes when the dough doesn't seem to want to stretch anymore. This will allow it to rest and relax, and then it will stretch again. Continue pressing the dough out until it is the size needed for the pizza pan. I do not use a rolling pin as this alters the texture of the dough.
- Drizzle a small amount of olive oil on your pizza pan. Spread oil evenly. Sprinkle each pan with one tsp cornmeal. Place stretched-out dough in pan. (I use a cast iron skillet and our pizza turns out like Pizza Hut pan pizza.).
- Top with sauce, toppings, and cheese. Let pizza set for about 15 minutes to allow dough to rise.
- Bake at 450 degrees for 15-20 minutes, until dough is golden and cheese is starting to brown. Baking time varies depending on the type and size of pan you are using.

- Combine sauce ingredients and let sit for 1 hour.
- Put yeast, sugar, salt, and dry milk in a large bowl.
- Add water and stir to mix well.
- Let rest for two minutes.
- Add oil and stir again.
- Add flour and stir until dough forms and flour is absorbed.
- Turn out on to a flat floured surface and knead for about 10 minutes, adding more flour as needed, until elastic and no longer sticky.
- Divide dough into three balls.
- Put 3 ounces of oil in each of three 9-inch cake pans, making sure it is spread evenly.
- Using a rolling pin, roll out each dough ball to about a 9-inch circle.
- Place in cake pans.
- Spray the outer edge of dough with Pam and cover with a plate.
- Place in warm area and allow to rise for 1 to 1 1/2 hours.
- Preheat oven to 475°F.
- For each 9" pizza, spoon 1/3 cup sauce on dough and spread to within 1-inch of edge.

- Mix 1 teaspoon sugar, yeast and warm water in a glass bowl and set aside in a warm place.
- Combine flour, salt, and 2 teaspoons of oil in a bowl.

- Make dough ball, coat with oil to prevent sticking, and let rise for 8-24 hours. Do not knead.

- Heat oven to 220C/fan 200C/gas 7. Place the pepper, courgette and red onion on a large non-stick baking tray and drizzle with 1 tsp olive oil. Season well and toss to combine. Roast in the oven for 20 mins until soft and beginning to brown. Set aside.
