HOMEMADE GARLIC BASIL MAYONNAISE
I didn't invent the technique of making mayonnaise with a stick blender, but since I don't remember who showed me, it's just going to be easier to take credit. If you've never tasted delicious homemade mayonnaise, you've never tasted mayonnaise.

Steps:
- Bring a saucepan of water to a boil. Prepare a bowl of ice water and have it standing nearby.
- Place basil leaves into boiling water and blanch until leaves are bright green and slightly soft, about 10 seconds. Remove basil leaves with a fine mesh strainer and place into ice water to stop the cooking process. Drain basil, wrap in a paper towel, and gently squeeze to remove excess moisture.
- Place egg yolks into a container with a base slightly larger than the base of a stick blender, such as a measuring cup or large beer glass. Add garlic, lemon juice, salt, cayenne pepper, black pepper, basil leaves, and Dijon mustard to egg yolks. Pour vegetable oil over the top.
- Push stick blender all the way to the bottom of the container. Pulse blender 6 or 8 times, about 1 second per time, until mixture begins to emulsify on the bottom. Once mayonnaise begins to form, raise the stick blender slightly in the container and continue to blend until all oil has run through the blender, mayonnaise is thick, and basil is finely chopped, 10 to 20 more seconds. Taste and adjust seasonings. Transfer to a bowl. Mayonnaise will keep, refrigerated, for 2 to 3 days.

Ranch is a year-round favorite, but every once in a while it's great to mix it up with seasonal ingredients. The peppery, slightly garlicky nature of ramps lends itself perfectly to the herbaceous profile that gives ranch its signature taste. You could say that they "ramp up" the flavor.

- Combine the yogurt, ramps, buttermilk, mayonnaise, dill, chives, garlic powder, onion powder, hot sauce, half of the lemon juice, 1/2 teaspoon salt and several grinds of pepper in a medium bowl and whisk well to combine. Taste and adjust the seasoning with more lemon juice and salt, if needed.
- Serve immediately or refrigerate in an airtight container for up to 1 week.
EASY HOMEMADE MAYONNAISE
After realizing how quick and easy it is to make homemade mayo (and how much better it tastes) I will never buy store bought again! All you need is an immersion blender, a few ingredients, and a couple of minutes to make the most delicious and creamy mayonnaise.

- Place light olive oil, egg, lemon juice, Dijon mustard, salt, and pepper together in a bowl. Use a hand-held immersion blender to blend mixture together, placing the blade directly on top of the egg yoke. Pull up the immersion blender slowly when fully emulsified, taking care not to over blend. Store in a tightly closed container; refrigerate until using.

- In a food processor, pulse the ramps (or garlic) with a pinch of salt until finely minced, scraping down the sides of the processor as necessary. Add the capers, egg, and 1 tablespoon of the lemon juice, and process until combined.
- With the motor running, pour the oil through the teensy hole of the food pusher insert so that it enters the bowl in a very slow, steady stream — add the oil very slowly at first; once it starts emulsifying, add the oil more quickly. Note: If you are using garlic as opposed to ramps, the amount of oil here should be right. If you are using ramps, you may need to add as much as a cup more oil to get it to the thickness you desire. The moisture of the ramps will make the aioli be on the thin side in terms of texture if you use only 1.25 cups. If the thin texture doesn’t bother you, there is no need to add more oil—I actually don’t mind the thin texture. It should be emulsified.
- After all of the oil has been incorporated, stop the motor and taste. Add more salt—I like using the Maldon at this point. Add it (or other salt) 1/4 teaspoon at a time. Add more lemon if the aioli is needing more sharpness. Process again, and continue adjusting as needed until it tastes right. Store in fridge until ready to serve.
