This came from Taste of Home's Quick Cooking and is much better than anything I've created on my own. The sauce is thick and gooy and goes well with so many things.

- Mix dark brown sugar, cornstarch, garlic powder, and ground ginger together in a saucepan until well-combined. Add red wine vinegar, pineapple juice, and soy sauce. Cook and stir over medium heat until bubbling, about 8 minutes. Add crushed pineapple; cook until thickened, 2 to 3 minutes more.

HOMEMADE SWEET & SOUR SAUCE
This is a real good sweet & sour sauce--full of chunky little tidbits that are so good. It makes about 3 cups. It will stay good in the fridge for about 3 or 4 days.

- Drain pineapple, reserving juice from pineapple.
- In a medium saucepan, combine sugar, can of tomatoes, onion, soy sauce, ginger and pineapple; simmer for 20 minutes.
- In a small bowl, combine cornstarch and reserved pineapple juice; stir till smooth.
- Add to the cooked pineapple mixture when mixture is done cooking.
- Bring to a boil and cook for about 2 minutes or till slightly thickened,Remove from heat and cool.
- Refrigerate till cold.

SWEET AND SOUR SAUCE

- Heat a wok or saucepan over high heat and add the oil. When the oil is hot, add the ginger and garlic. Stir-fry just until fragrant, and then add the juice, vinegar, brown sugar and soy sauce. Bring to a boil and cook until the sugar has dissolved. Stir in the cornstarch and water mixture and cook until thickened, about 1 minute. Stir into any nearly completed stir-fry dish and bring to a boil until the sauce thickens, about 1 minute.

- In a small bowl, combine the brown sugar, vinegar, ketchup and soy sauce. Pour half into a large resealable plastic bag; add pork. Seal bag and turn to coat; refrigerate for 30 minutes. Set remaining marinade aside., Drain and discard marinade from pork. In a large skillet, cook pork in oil for 3 minutes. Add the onion, carrots, green pepper, garlic and ginger; saute until pork is tender. Add reserved marinade. Bring to a boil; cook for 1 minute. Stir in the pineapple. Serve with rice if desired. - Mix Part 2 ingredients and add to boiling mixture.

SWEET AND SOUR SAUCE
This is a very easy sauce to make and much tastier and more economical than the purchased bottled variety. The vegetable stock can be substituted for pineapple juice or just plain old water. I use the juice when I am making a stir fry that I will throw some pineapple pieces into. You can vary the ingredients to your taste. To make this sauce gluten free, ensure that you use a GF stock, soy sauce and maize cornflour. White Wings cornflour and Fountain soy sauce are currently gluten free in Australia. The sauce will keep easily for a week in the refrigerator
