these are homemade soft taco shells my mom would make when we were growing up, we always loved them. I don't know where she got the recipe i don't think she even knows, she's a great collector of recipes. My husband even likes these and he's not a big fan of soft taco shells!

Steps:

  • Preheat a dry skillet over medium/high heat.
  • Mix the ingredients well.
  • The batter will be runny.
  • Drop by large utensil spoonful onto skillet, quickly spreading the batter in a circular motion, working from the inside out.
  • Each side only takes about 1 minute of cooking.
  • The shells are not supposed to brown.
  • When the shells are removed from the pan, they can be molded into"taco shell shape" by placing, half-curled, between two objects, such as coffee cups.
  • I like to serve them to each guest directly from the pan without molding them, however, becuz I find that they dont crack while still hot and pliable.
  • Fill with all the taco stuffin's and enjoy!

1/2 cup yellow enriched cornmeal
1/4 teaspoon salt

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook according to the package directions. Drain and set aside.
  • Heat the olive oil and 2 tablespoons of the butter in a pan over medium-high heat. Add the ground beef and cook, crumbling it with a wooden spoon, until browned, 5 to 8 minutes. Stir in the chili powder, cumin, onion powder, garlic powder and paprika. Stir in the diced tomatoes and chiles, hot water, 1 teaspoon salt and 1/2 teaspoon pepper and bring to a simmer. Cook until the sauce thickens, 2 to 3 minutes, then remove to a bowl (it will still be a little juicy).
  • In the same pan over medium heat, add the remaining 2 tablespoons butter and the milk and cook until hot and bubbling. Add the processed cheese and cook, stirring, until melted. Do the same with the Cheddar jack. Pour in the cooked pasta, add the taco meat and stir to combine. Taste and adjust the seasoning, thinning with a splash of milk if needed. Stir in the cilantro.
  • Top each serving with some sour cream and salsa if desired.

TACOS FROM SCRATCH (WAY BETTER THAN A PACKET AND JUST AS EASY!)

Those "taco seasoning" packets are usually so high in sodium and contain all kinds of unecessary junk. Give this one a try. You can adjust the seasoning to your liking, add onions when you brown the beef or not, whatever you like. I like to add fresh jalapenos when I add the sauce. Consider this a base recipe. Enjoy!

Steps:

  • In a saute pan (I prefer non-stick but this isn't crucial), brown ground beef.
  • While beef is browning, combine the remainder of ingredients in a small bowl.
  • Drain beef. Return to pan. Add the sauce. Stir, and add some water if desired (I add maybe 4-8 oz.). Simmer uncovered until meat reaches desired consistency.
  • Serve on heated taco shells with cheese, sour cream, lettuce, tomatoes, olives, and hot sauce or however you prefer to use seasoned taco meat.

  • Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Divide the dough into 24 equal pieces and roll each piece into a ball.
  • Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Steps:

  • Combine masa harina with water.
  • Mix with hands until dough is moist but holds its shape.
  • Add more water if needed.
  • Let dough rest for 15 minutes.
  • Divide dough into 12 balls.
  • Dampen dough slightly with water.
  • Using a tortilla press or a flat baking dish, press dough between two pieces of waxed paper to a 6 inch round.
  • Carefully peel off the top sheet of paper.
  • Place tortilla, paper side up, on a hot ungreased griddle or skillet.
  • Gently peel off remaining paper.
  • Cook for 30 seconds or until edges begin to dry.
  • Turn and cook until surface appears puffy.
  • Repeat with remaining dough balls.
  • To make taco shells: In a heavy skillet heat 1/4 inch cooking oil.
  • Fry each tortilla 10 seconds or until limp.
  • With tongs, fold tortilla in half and continue frying holding edges apart.
  • Cook 1 1/4 to 1 1/2 minutes more or until crisp, turning once.

  • Heat about 1 inch of oil in a heavy skillet over medium to medium-high heat to 365 degrees F (180 degrees C).
  • Use tongs to place one tortilla at a time into the oil. It should start to sizzle right away. Cook for about 15 seconds, then flip over and fold the shell in half, holding in place with the tongs until crispy, about 15 seconds. You may need a little practice at first. Drain on paper towels, and sprinkle with salt while still hot. Use for tacos right away, or they may become chewy. Leftovers may be heated in the oven for crisping.
