Steps:

  • Preheat your oven to 400 degrees F.
  • Meanwhile, gather the flour, baking powder, salt, sugar and baking soda into your large mixing bowl and whisk together until fully incorporated. Now cut your butter into small cubes with your bench knife or straight edge knife and place into the bowl. Using your pastry cutter, cut the butter into the dry mixture in a downward twisting motion until you reach a sandy texture. At this point, your dry mix should feel like beach sand, but if there are some slightly larger pieces of butter remaining this is okay. Those pieces will create the flaky effect when the biscuits begin to cook. Now, create a well in the center of your bowl of dry ingredients. Pour the buttermilk into the center of the bowl. Using your hands (this will feel funny and get messy), incorporate all the ingredients until the dough begins to come together and become one.
  • Now put a small amount of flour on a flat surface and continue to bring the dough together, making sure not to knead the dough or overwork it. Use some of that extra flour to bring it all together and get the dough off your fingers too. Now spread out and flatten the dough so it's about the height of your flattened hand. Using your biscuit cutter (dip it in some flour to keep any dough from sticking to it), cut out 24 biscuits, reworking the dough if need be. Place a piece of parchment paper on your cookie sheet and line up the cut biscuits, 4 by 6. Place the biscuits into the oven and cook until golden brown, about 20 minutes. Remove the biscuits and let cool for about 5 minutes before handling. These biscuits are great for breakfast with eggs and bacon, or alone as a snack.

2 tablespoons kosher salt
8 cups all-purpose, unbleached flour, plus extra for your board and cutter
8 cups all-purpose, unbleached flour, plus extra for your board and cutter

2 tablespoons sugar
2 teaspoons baking soda

Steps:

  • Preheat oven to 425 F Mix first 4 ingredients together in a bowl.
  • Cut in butter with a pastry blender or a fork, or two knives, until crumbly.
  • Add milk.
  • Stir until it forms a ball.
  • Add a bit more milk if necessary to make a soft dough.
  • Roll or pat to 1 inch thick. (I usually pat the dough).
  • Cut into circles with a biscuit cutter or a floured glass.
  • Arrange on a greased baking sheet.
  • Bake in 425 F for about 10- 12 minutes or until risen and nicely browned. (in my oven it usually takes 15 minutes).
  • This is supposed to make 12, but I almost always only get 11 biscuits, with the size of the glass that I use.
  • Variations: Try adding some fresh or dried herbs. Some good pairings are basil and oregano, or parsley and fresh ground black pepper, or thyme and garlic, or add some grated sharp or old cheddar cheese.

Steps:

  • Preheat oven to 450 degrees.
  • In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
  • Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
  • Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

Steps:

  • First get out your big bowl. Put the flour, baking powder and salt into the bowl. Drop in the shortening and use your fingers to casually mix it in with the dry ingredients. Don't get too serious about it because it is better to under mix at this point than over mix. There should still be a few lumps of shortening, the size of peas, or even a little bigger, Two minutes of mixing or less should do it. Next add the milk. Stir it up into a soft dough. On dry days you may need to add another spoonful or two of milk. Form the dough into a soft ball. Get a piece of waxed paper and lay it on your counter. Sprinkle the waxed paper with a little bit of flour and knead it exactly 10 times. No more, no less. Next flatten out the dough with a rolling pin or your hands so it is about 3/4-inch thick. Cut into biscuit shapes with a biscuit cutter, or the rim of a glass. Lay the biscuits onto a cookie sheet or a pizza pan and bake them at 425F for 10 to 15 minutes, depending on their size. Makes about a dozen medium sized biscuits. You can brush them with melted margarine when you take them from the oven if you want them to look pretty when they arrive at the table.
  • Cheese biscuits: Add a cup of shredded cheese after you mix in the shortening, right before adding the milk. Cut into smallish biscuits and bake as directed.
  • Bacon bicuits: Add 1/3 cup of soy bacon bits to the flour right after adding the shortening. Cut into small circles and bake as directed.
  • Drop biscuits: Substiute melted shortening or oil for the solid shortening. Increase the milk to almost a full cup. Stir it into the flour making a sticky dough. Drop the biscuits by small spoonfuls onto an oiled cookie sheet. Bake as directed.

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking sheet with baking parchment. Put the butter in a bowl and beat it with electric beaters until soft and creamy. Beat in the sugar, then the egg and vanilla, and finally the flour to make a dough. If the dough feels a bit sticky, add a little bit more flour and knead it in.
  • Pull pieces off the dough and roll them out to about the thickness of two £1 coins on a floured surface. The easiest way to do this with small children is to roll the mixture out on a baking mat. Cut out shapes using a 9cm biscuit cutter, or a use the rim of a small glass and peel away the leftover dough around the edges. Press some clean toys gently into the biscuits, making sure you make enough of a mark without going all the way through. Re-roll off-cuts and repeat.
  • Transfer the whole mat or the individual biscuits to the baking sheet and bake for 8-10 mins or until the edges are just brown. Leave to cool for 5 mins, then serve. Will keep for three days in a biscuit tin.

HOMEMADE BUTTERY BISCUITS

I got this recipe from a friend. These are quick and easy to make. Please do not substitute sweet milk for the buttermilk. (It is okay to make your own by adding a Tablespoon of lemon juice or vinegar to milk and let it sit 5 minutes.) Please note that the amount of flour is approximate. If your dough is too sticky you can add more by sprinkling it on top while kneading.
