HOMINY CASSEROLE

Steps:
- Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
- In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
- Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.
HOMINY AND CORN CASSEROLE
This is an easy side dish that has a little unexpected twist with the green chilies. My family always requests it for holiday dinners.

- 1. Preheat oven to 350
- 2. Combine everything except the cheeses.
- 3. Spoon 1/2 into a greased casserole dish.
- 4. Mix the cheeses and sprinkle 1/2 over the mixture.
- 5. Repeat the layers.
- 6. Cover. Bake at 350 for 40 minutes or until bubbling all through. Remove cover for 5 minutes and let the cheese brown a little.

In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

My grandmother used to make this recipe. She got it from a ladies cookbook in Lubbock, Texas. My mom made it, and now I make it. It is a family favorite!

- Sprinkle grated cheddar cheese on top.

- In a medium bowl, whisk the eggs, milk, flour, garlic, salt, and ground red pepper together until combined. Pour milk mixture over the cheese. Bake for 50 to 55 minutes, or until a knife inserted off-center comes out clean. Let stand 10 minutes before serving.

Steps:
- Rinse hominy and drain, well.
- Combine hominy and next 6 ingredients.
- Spoon half of hominy mixture into a lightly greased 11 X 7 inch baking dish.
- Combine shredded cheese and sprinkle half of it on the hominy mixture.
- Spoon the remianing hominy mixture over cheese.
- Bake, covered, at 350 degrees for 35 minutes.
- Uncover and sprinkle with the remaining cheese and paprika and bake uncovered for 5 minutes.
