LAVENDER TEA BREAD

I make this tea bread when the lavender is in bloom. Try it with fresh strawberry slices on top.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x5 inch loaf pan.
  • Combine the milk and lavender in a small saucepan over medium heat. Heat to a simmer, then remove from heat, and allow to cool slightly.
  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg until the mixture is light and fluffy. Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk and lavender until just blended. Pour into the prepared pan.
  • Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the crown of the loaf comes out clean. Cool in the pan on a wire rack.

Steps:

  • Place raisins and cherries in a large bowl. Pour strong, warm tea over the and stir in the honey. Cover with plastic wrap and let stand for 1 1/2-2 hours.
  • Preheat oven to 350°F Lightly grease a 9×5 inch loaf pan.
  • Stir two eggs into raisin mixture.
  • In a small bowl, mix flour, spices, salt and baking powder. Add to raisin mixture and stir thoroughly. Pour into prepared pan.
  • Bake for 40-50 minutes, until a tester comes out clean.
  • Turn loaf out of pan and cool on a wire rack.

  • First, start by preheating the oven to 350F then butter and flour a 5X4 inch baking pan and set aside.
  • In a stand mixer bowl, sift the flour, baking powder, salt. Add in the sugar and mix until incorporated (about 20seconds). Add in the softened butter and half of the egg mixture and beat on medium low until incorporated (about 3 minutes.) Now increase the speed to medium high and beat for another 3 minutes in order to get a thick and airy cake batter. Lower the speed again and add the remainder of the egg mixture and gently mix until incorporated (about 2 minutes)
  • Pour the batter into the prepared baking sheet and bake for 35-45 minutes. You will know that the cake is ready when it no longer jiggles in the center, has a golden brown top, and a knife of a wooden skewer comes out clean when inserted in the center.
