INDIAN LASSI
Here is a basic recipe for Indian Lassi (yogurt drink). You can add more or less yogurt or water for a thicker or thinner beverage. For a salty lassi, you can substitute 1/2 teaspoon salt for the sugar. Garnish with fresh mint if desired.

Steps:
- In a blender, blend the yogurt, ice, water, sugar and salt until mixture becomes frothy. Pour mixture over ice cubes in tall glasses.

GINGER MANGO LASSI
Steps:
- To remove the flesh of the mango, cut the flesh away from the pit in 2 large pieces. Use a paring knife to cut through the flesh (but not through the peel) in a crisscross grid pattern. Use your thumbs to press against the skin side and pop the mango cubes up. Cut across the bottom, along the peel and add the cubes to the blender.
- Peel ginger. Grate ginger finely into bowl. Use fingers to squeeze juice out of gratings. Discard juiced gratings.
- Put ginger and remaining ingredients in the blender and blend until thick and smooth.
- If you don't have a blender you can still make the drink: Just whisk everything but the ice together in a mixing bowl. Fill glasses with ice and pour the mixture on top.
HONEY-GINGER LASSI
This is different than a traditional Lassi in that it doesn't include yogurt. It is something like a thin milkshake with a bit of spice. Recipe is from Vegetarian Planet. There is also a variation to make it a warm drink.

- Combine all of the ingredients except the ice in a blender. Blend for 30 seconds to froth the milk.
- Add the ice cubes, and blend until the ice is pulverized. Pour the lassi into large glasses filled with ice, and serve.
- Variation: The same ingredients can make a soothing warm drink. Increase the milk to 3 cups, and heat it almost to a boil. Add the honey, ginger, and nutmeg, and stir well. Omit the ice. Serve in mugs.

HONEY BERRY LASSI

- Blend the mixed berries and the 1 tbls. honey in a blender until smooth. Spoon into 2 chilled glasses.
- Blend the yogurt with the 2 tbls. honey and the 6 ice cubes.

- Put yogurt in a bowl. Beat lightly with a whisk until light and creamy.
- Hold the ginger over the yogurt and squeeze out all of its liquid.
- Discard the ginger pulp in your hands.
- Add the salt and cumin seeds to the yogurt and mix well.
- Slowly pour in about 1/2 cup of water, mixing as you go.
- Add ice and mix again.
- Taste for balance of flavor.
- Pour into serving glass.
JASMINE HONEY LASSI
Sara adds a spoonful of bee pollen granules to this flowery smoothie, which she thinks turns it over-the-top sublime. Bee pollen is a storehouse of all naturally occurring multivitamins, proteins, minerals, amino acids, enzymes and hormones. Mary, however, is not wild about bee pollen's sweet-but-raw earthiness and chalky texture. With or without a dash of pollen, the BEE-ootiful combination of jasmine and pure raw honey calls to mind the rare deliciousness of wild honeysuckle. LASSI (INDIAN YOGURT DRINK)
A recipe I came across while searching for recipes of India and it is from "whats4eats.com". Here is what is stated: "Lassi is a cooling yogurt beverage originally from the northern part of India. Traditionally lassi is unsweetened and has a pinch of salt and some spices mixed in. More recently, sweetened fruit lassis have become very popular drinks, both in India and around the world."

- 1.Place all ingredients except the ice cubes in a blender and blend until smooth.
- 2.One by one, add the ice cubes and blend further until they are broken down into a slush.
- 3.Serve in a tall, cold glass on a hot, hot day.
- Variations.
- •Plain Lassi: eliminate the sugar, fruit and rosewater. Substitute a pinch of salt and some toasted cumin seeds.
- •Bhang Lassi: a traditional lassi with cannabis extract and ground almonds. Used in the religious festival of Holi.
- •Good fruit choices are mangoes, papayas, strawberries and melons. Or try using lemon or lime juice. You can use anything you like really.
- •Add a pinch of ground cardamom, a few strands of saffron or some chopped mint if you like.

- Add the flesh of the mango to a blender. Peel ginger using the back of a spoon. Grate the ginger finely into a bowl. Use your fingers to squeeze juice out of the gratings(I just throw it all into the blender, but if you don't like the texture, go ahead and squeeze the juice out).
- Put all ingredients into the blender and blend until completely smooth.
- Enjoy!
