this is as close as i can find for this soup if any one else knowa about this please write one person did already which is why this is 3 because not as he remembered sigh good crockpot dish can add more meat if you have bucks lol

Steps:

  • brown ox tail in oil.
  • add tomato paste.
  • add spices.
  • add onion.
  • add celery.
  • add carrots.
  • add garlic.
  • add water.
  • add bouillon cubes
  • simmer for 2 hours.( i put in crock pot because it was starting to burn on stove top and worked great ).
  • if using crock pot add everything here
  • add rest of ingredients.
  • simmer for 1 hours.

1 lb oxtail
1 onion, cut into strips
1 tomatoes, cut into chunks
2 potatoes, peeled and cubed
1 carrot, peeled and cubed
2 celery ribs, chopped
4 cups cabbage, shredded
2 garlic cloves, diced
1 bay leaf
salt and pepper
2 beef bouillon cubes
1 teaspoon paprika
1/4 cup tomato paste
1/4 cup ketchup
1/4 cup oil
8 cups water

UKRAINIAN BORSCHT

This is a meatless (not vegetarian) Borscht, and even my husband, who MUST have meat with every meal, loves this! Sometimes we make it in summer and serve it cold. It's very tasty! It came from a cookbook many years ago, but I can't remember which one. And I've changed it over the years and I do my own thing, there is no need to measure any of the veggies, it always turns out wonderful. So eyeball it! (Your food processor will come in mighty handy for shredding all these veggies!) Enjoy!

Steps:

  • Cook beets, carrots and onion in the 3 cans beef broth for 20 minutes.
  • Add cabbage and butter, and cook uncovered for about 20 minutes.
  • Season to taste.
  • Stir in lemon juice.
  • Now let it sit (but you don't have to), for an hour or so. Reheat or leave at temperature and serve with sour cream.
  • This is better the next day!
