HOT APPLE SATELLITE CIDER
I learned how to make this from my friend Judy Goad in about 1972 or so. Making it this way makes the house smell wonderful, the drink taste delicious, and there is hardly any clean up!! Enjoy!!

Steps:
- Place cider in large pot for cooking and put it on a back burner of the stove. (To free up the front for other things -- the cider will be on the stove for a while.)
- Take the cinnamon sticks and punch into orange at intervals circling around the middle (it will look like a satellite) NOTE: Choose the thinnest cinnamon sticks to make them easier to push through the orange skin -- leave 70 percent of the cinnamon stick sticking out of the orange.
- Punch whole cloves into orange also -- they have a long tail which can be pushed into the skin leaving the rest of the clove on the outside of the orange.
- Place the orange satellite into the pot of cider and bring to a boil, then turn down to low simmer to just keep it warm. The orange will float on top of the cider making it easy to pull out when it is done.
- Let it simmer for at least an hour -- more if you like. Remove when the cider tastes perfect to you. The citrus oil, cinnamon, and cloves make the house smell good, and the cider delicious. It also makes the cider clear which means no fishing out bits of things from the cups in order to drink it. It is "user friendly" LOL
- Do not eat the orange afterward -- it will taste terrible -- guess how I know? Just throw it away. It will make the trash smell nice for a while, too -- LOL
- NOTE: There is no need to add any kind of sweetener -- the apple cider is already plenty sweet
HOT APPLE CIDER

- Fill the filter-lined basket of a large automatic percolator with the brown sugar, cloves, allspice and cinnamon sticks. Prepare as you would coffee according to manufacturer's directions, but substitute cider for water.

HOT APPLE CIDER
Nothing beats a mug of hot cider on a cold winter day. This recipe is great as it calls for fresh apple cider and pure maple syrup. Start with only 6 strips each of the orange and lemon peel, and adjust to taste.

- Pour the apple cider and maple syrup into a large stainless steel saucepan.
- Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
- Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
- Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

SPICED HOT APPLE CIDER

- Place first five ingredients on a double thickness of cheesecloth. Gather corners of cloth to enclose spice mixture; tie securely with string., Place cider and spice bag in a 3-qt. slow cooker. Cook, covered, to allow flavors to blend, 2-3 hours. Discard spice bag. If desired, stir in rum.

HOT SPICED APPLE CIDER
Steps:
- Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
- Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
- Serve hot with a cinnamon stick in each glass for stirring.
