REAL HOMEMADE BOLOGNA
This is the REAL homemade bologna and it is simply delicious! My Grandmother made this and gave the recipe to my Mom, and she gave it to me! You can say it is passed down! I am not a real big fan of Bologna, but once you taste this, you will love it all over again!

Steps:
- In a large bowl, mix together the ground beef, curing salt, water, garlic powder, onion powder and liquid smoke using your hands. Divide in half, and form each half into a roll. Wrap in plastic wrap, and refrigerate for 24 hours.
- Preheat the oven to 300 degrees F (150 degrees C). Unwrap the beef rolls, and place them on a greased baking sheet or roasting pan.
- Bake for 1 hour in the preheated oven, turning the meat over after 30 minutes. Cool to room temperature, then refrigerate until chilled. Slice, and eat on sandwiches.

- Cut ring of bologna in pieces, about 2 inches long. Place in a glass jar. Add crushed red pepper, cayenne pepper, and salt. Mix white vinegar and water. Pour over bologna. Shake well, place lid on jar and refrigerate. Should be ready in a day or two. The longer the better!
HOT PICKLED BOLOGNA
This is a great Beer drinking food! Also a low carb snack! Sometimes I use different vinegars, and I substitute the bologna with hot dogs!

- Place the bologna in a large sealable jar. Combine the vinegar, peppers, onion, water, hot pepper sauce, and salt in a saucepan; bring to a boil; pour over the bologna. Seal the jar. Shake daily. Allow to pickle at least 3 days. For best results, allow bologna to pickle 90 days.

- Remove skin from ring bologna. Cut ring of bologna in 1/2 inch slices cross-wise OR 2 to 4 inches long, then slice lengthwise in half. Place in a large glass jar. Add crushed red pepper and salt.
