HOT CHEESE OLIVES
This is classic 1950s cocktail fare that, unlike the savory gelées and boiled ham canapés that are best forgotten, we still want to eat today. Just wrap cocktail olives in a simple Cheddar dough and bake until golden. Martini optional.

- Heat the oven to 350 degrees. Beat the butter until creamy in a large mixing bowl, add the cheese and mix well. Stir in the flour, salt, cayenne and the Worcestershire and mix until smooth. Beat the egg with 2 tablespoons cold water. Add to the dough and mix just until incorporated. Refrigerate for 30 minutes.
- Remove the dough and flatten out a piece about the size of a walnut into a thin round. Place an olive on top and shape it around the olive, pinching to repair any breaks. Place it on an ungreased cookie sheet. Repeat with the remaining dough and olives. Bake until the dough sets, about 15 minutes. Serve hot.

BAKED CHEESE OLIVES
Rich cheese dough surrounds a savory olive. A great pick-up appetizer or snack. You can freeze the unbaked, dough-wrapped-olives and then bake them right out of the freezer, extending the baking time by a few minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- In a small mixing bowl, combine cheese and butter or margarine. Stir flour and cayenne pepper into the cheese and butter mixture. Blend well. Wrap a tablespoon of dough around each green olive. Arrange the wrapped olives on a cookie sheet.
- Bake for 15 minutes, or until golden brown.

WARM MARINATED OLIVES
Steps:
- Drain the green and black olives from the brine or oil that they're packed in and place them in a medium bowl. Add the orange zest, garlic, fennel seeds, thyme leaves, red pepper flakes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Pour the olive oil over the mixture, add the thyme sprigs and toss to combine.
- Transfer the mixture, including the olive oil, to a medium (10-inch) sauté pan. Heat over medium heat until the oil begins to sizzle. Lower the heat and sauté for 4 to 5 minutes, stirring occasionally, until the olives and garlic are heated through and fragrant. Serve warm right from the pan or transfer to a serving dish. Offer a small dish for the pits.

- Preheat oven to 375 degrees Fahrenheit.
- Line a large rimmed baking sheet with parchment paper (which will help with easy clean-up; important during busy Halloween time!)
- Open the crescent rolls dough and separate along the perforated lines into 8 triangles.
- Lay one piece of dough on a cutting board and, using a sharp knife, cut along the long side into 1/2-inch long strips.
- Wrap strips around hot dog, leaving a spot for the eyes along one end.
- Bake until the dough is golden and cooked through and the veggie dogs/hot dogs are warmed through, 15-20 minutes.
- Add eyes. I like to put the cream cheese in a small baggie and cut the corner off, then pipe the cream cheese on. Plop in an olive pupil (use a toothpick to position exactly right if you like) and they're ready!
- Serve with ketchup and mustard.

- On a large cutting board, arrange piles of hot pepper salad, cheese and sausages or salamis. Serve olives in a small bowl with a second bowl set out for the pits. Pile toothpicks into a shot glass and set on edge of board. Bread sticks of grissini look great in a water glass and add height to your antipasto board. Smoked almonds can be served in any barrel shaped glass; easy to pick up and spill out a few nuts into the palm of your hand. Decorate your board with bundles of any combination of fresh herbs that you have on hand.

CHEESE OLIVE BALLS
A fantastic recipe, a bit different from the others on the site, as it contains more spices. I usually have these in the lounge before settling my guests down for dinner, and they always go really quickly. I don't remember where I got it from, but it's certainly a favorite and I'll be making them for Christmas eve! These are best made the day before, and popped in the oven just before you need them.

- In a medium-size bowl, cream butter.
- Mix in flour, cheese, paprika, cumin, and hot sauce.
- Cover bowl and refrigerate at least an hour.
- Dry olives on paper towels.
- With a ball of cheese mixture that is close in size to the olive, flatten the cheese mixture in your palm, plop the olive in the center, work the mixture up around the olive, and then very gently roll it around between your palms.
- Make sure the cheese mixture completely seals in the olive.
- Repeat with remaining olives.
- Place the cheese-wrapped olives on a parchment-lined baking sheet and place in freezer until frozen. If you are planning to bake immediately, place in the freezer for about 15 minutes.
- Once frozen, you can store in resealable plastic bags in the freezer until you are read to bake them.
- Preheat oven to 400 degrees F.
- Prior to baking, remove olive from the freezer and allow to stand at room temperature for approximately 15 minute (while the oven is heating).
- Place olives on a baking sheet and bake for 15 minutes. Remove from oven and let cool to slightly warm.
- Serve at room temperature to slightly warm.
