- In a large kettle or Dutch oven over medium heat, bring 1 qt. of water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Remove tea bags. , Place cloves and cinnamon sticks in a double thickness of cheesecloth; bring up corners of cloth and tie with a string (or, if desired, place loose spices in pan and strain tea before serving). , Place the cheesecloth bag in pan; add the concentrates, sugar, tea and remaining water; bring to a boil. Boil, uncovered, for 6 minutes. Serve hot.

Serve with cinnamon sticks for stirrers if desired.

HOT SPICED TEA FOR THE HOLIDAYS
This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

- Pour water into a pot; add cloves and cinnamon stick. Bring water to a boil; remove from heat. Add tea bags to water and set aside to steep until the tea is to your preferred strength, at least 5 minutes. Remove and discard cloves, cinnamon stick, and tea bags.
- Stir orange juice, sugar, pineapple juice, and lemon juice together in a saucepan; bring to a boil. Cook and stir the juice mixture until the sugar dissolves completely. Pour juice mixture into the spiced tea; serve hot.

SPICED ORANGE TEA, HOT OR COLD
I found this recipe in a book I picked up at a thrift shop. I'm not really a tea drinker so like to find ways to get those good anti-oxidants without the tea taste. This is all orange & spice so I quite liked it. I didn't have whole cloves so made mine with a dash of ground cloves instead. I had one cup warm & then put the rest in the fridge to have iced, it was nice both ways.

- Combine water, sugar, cloves & cinnamon in a saucepan, mix & bring to the boil.
- Remove from heat & add tea bags, infuse for 4 minutes.
- Strain & stir in remaining ingredients.
- Place over a low heat to keep warm but do not boil.
- Discard orange peel & add honey to taste, (I added about 1 tsp per cup).
- Serve with long cinnamon sticks as mixers.

- Pour 2 quart boiling water over the 8 teabags.
- Brew 5 minutes, remove tea bags, set aside.
- While doing the above boil 2 Celsius each water and sugar together for10 minutes, or until sugar is disolved, to make syrup.
- Add remaining ingredients.
- Bring backto boil and simmer 20 minutes.
- Remove cloves and cinnamon.
- Serve hot.
- Allow each person to sweeten as they choose.

- In a 5- or 6-qt. slow cooker, combine boiling water and tea bags. Cover and let stand 5 minutes., Meanwhile, place cinnamon sticks, ginger and cloves on a double thickness of cheesecloth. - Pour boiling water into a very large bowl. Add the tea bags.
- Let steep for 5 minutes.
- Remove and discard tea bags Stir in sugar and cinnamon until sugar is dissolved.
- Stir in pineapple juice, cranberry juice, and lime juice.
- Remove 3 cups of the mixture.
- Cover and chill the remaining mixture for at least 4 hours or up to 3 days.
- Pour the 3 cups tea mixture into two clean ice cube trays, adding kumquat slices, if desired.
- Cover and freeze until firm.
- To serve, divide prepared ice cubes among glasses.
- Add chilled tea mixture.
- If desired, garnish with fruit and/or mint. Makes: 8 to 10 (about 8-ounce) servings.
