HOUSER'S BLUE RIBBON PUMPKIN PIE GRANGE FAIR WINNER

From CDT Wens 30th 2000 M Houser age 9, Blue Ribbon Pie winning recipe on his first try at entering the fair's pie category. " We never expected this." said his Mother, who taught M to bake when he was old enough to stand on a chair. He doesn't have to look at a recipe and "he cracks his eggs one handed." Pretty good for a 4th grader. Why no other spices? Well M doesn't like nutmeg or allspice.

Steps:

  • Dough:.
  • Mix flour, salt and shortening until crumbly and add water by tablespoon until dough is easy to handle. Recipe provides a generous amount of dough to make rolling out easier.
  • Divide dough in half and roll out each portion to line an 8 inch pie pan. Lay the crust in the pie pans, trim the edges and fold them under.
  • Filling:.
  • Combine the sugar, salt and cinnamon and add the eggs, mixing well. Stir in the pumpkin and milk and mix well.
  • Pour half the filling into each pie shell and bake 15 minutes at 425°F Then reduce the heat to 350F and bake 40 to 45 minutes longer.

2 (12 ounce) cans evaporated milk

NORTHERN FRIED CHICKEN

This recipe comes from "Blue Ribbon," a restaurant in NYC. It was featured in "Saveur" magazine. At the restaurant it is served with collard greens that are quickly sauteed in brown butter, a technique they invented when they ran out of greens and had to come up with something quickly!

Steps:

  • Add oil, to a depth of 2 inches in a Dutch oven and heat over medium high heat, about 375 degrees F.
  • In a small bowl, combine paprika, cayenne, basil, parsley, garlic powder, and onion powder; set aside.
  • Beat egg whites in another bowl.
  • In a third bowl, combine flour, matzo, and baking powder.
  • Dip a piece of chicken in egg whites, then press into the matzo mixture so crumbs adhere; shake off any excess.
  • Transfer chicken to a rack set over a baking sheet.
  • Repeat with remaining chicken pieces.
  • Fry chicken until crispy and cooked through, about 10-12 minutes; drain on paper toweling then season with salt, pepper, and the reserved seasoning mixture.

BETTER THAN PUMPKIN PIE

This is a blue-ribbon award-winning recipe that my husband cut out of our local newspaper from a recipe contest. I have not made it yet, but I will as soon as I can because DD Loves Pumpkin Pie! Here's what the author, Debbie Grandits, says about it, "Everyone's response was, It's better than pumpkin pie, and this year my phone has been ringing off the wall with requests for the recipe".

Better Than Pumpkin Pie image

Steps:

  • Combine in mixer the pumpkin, sugars, eggs, vanilla, evaporated milk and spices, mixing well.
  • Pour into a 12 x 9 inch baking pan.
  • Sprinkle the dry cake mix on top and pat down.
  • Melt the butter and drizzle over the top.
  • Sprinkle with nuts.
  • Bake at 350 degrees for 45-60 minutes or until lightly browned and set.
  • Let cool.

1 (29 ounce) can solid pack pumpkin
1 cup sugar
1 cup firmly packed brown sugar
3 eggs, beaten
1 tablespoon vanilla
1 (12 ounce) can evaporated milk
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 box yellow cake mix (2-layer size)
1 cup butter or 1/2 cup margarine
1 cup chopped nuts

Steps:

  • Prepare baked 9-inch pastry shell; set aside.
  • For fudge sauce, in a small saucepan combine the 1 cup sugar, the evaporated milk, butter and chocolate.
  • Cook and stir over medium heat until bubbly.
  • Reduce heat and boil gently for 4 to 5 minutes, stirring occasionally, until mixture is thickened and reduced to 1 1/2 cups.
  • Remove from heat; stir in vanilla.
  • Beat until smooth with wire whisk or rotary beater.
  • Set aside to cool completely.
  • In a chilled bowl, stir 1 pint of the ice cream until softened.
  • Spread into cooled baked pastry shell.
  • Cover with half of the cooled fudge sauce.
  • Freeze until nearly firm.
  • Repeat with remaining ice cream and fudge sauce.
  • Return to freezer while preparing meringue.
  • In a medium mixing bowl dissolve the 3/4 cup sugar in the boiling water.
  • Cool to room temperature.
  • Add the meringue powder.
  • Beat on high speed until stiff peaks form.
  • By hand, fold 3 tablespoons of the crushed candy into the meringue.
  • Spread meringue over chocolate sauce layer, sealing to edge.
  • Sprinkle top with remaining crushed candy.
  • Freeze until firm (several hours).
  • Bake in a 475° oven for 3 to 4 minutes or just until meringue is lightly browned.
  • Cover loosely and return to freezer for a few hours or overnight before serving.
