Steps:
- In the bowl of a food processor combine the yeast, sugar, flour, salt and thyme. Pulse to combine. Add the water in a steady stream until the dough begins to form a ball, turn it on to a board and knead with the heel of your hand until the dough is smooth and elastic.
- Coat a bowl with oil. Place dough in bowl, and cover with a damp cloth. Put in a warm spot to rise until double in size, about 1 hour.
- When the dough has doubled in size, punch the dough, scrape it onto the counter and knead it lightly into a smooth ball. Cut into 20 pieces and with a rolling pin roll out to form very flat 5 to 6-inch circles.
- Preheat a stove top grill pan over medium high. Do not oil. Place bread on hot grill and cook without touching it until you see bubbles on the surface, about 1 to 2 minutes. Turn and continue to cook 1 to 2 minutes more or until bread has puffed up. Serve immediately.

Steps:
- Combine the flour, baking powder, yogurt and oil with 1 tsp salt and 2 tbsp water, and bring together into a rough dough. Tip onto a lightly floured surface and knead for a few minutes until slightly smooth, then divide into four to eight pieces, depending on the size of flatbread you want.
- Heat a heavy-based frying pan over a high heat. To make basic flatbreads, roll the dough pieces out on a lightly floured surface into rough ovals, then fry for 1-2 mins on each side until golden and slightly charred in spots. Alternatively, roll the dough pieces out, brush with a little melted ghee or butter, and scatter over the cumin seeds, garlic, coriander or chillies, if you like. Fold each piece of dough over on itself, then roll out again into a rough oval and cook in the same way.
- Brush the flatbreads with a little melted butter or ghee, then serve.

Steps:
- Sift the flours and 1 tsp salt into a large bowl. Add 1 tbsp of the oil and 150ml warm water. Bring together into a soft but not too sticky dough (you may need up to 175ml water). If it feels too wet, add some flour. If it's too dry, add water.
- Tip onto a floured surface and knead for 4-5 mins, or until smooth. Put the dough in an oiled bowl, cover and leave for 30 mins.
- Tip onto a floured surface. Divide into six balls and roll each out into a thin, 18-20cm wide circle using a rolling pin. If you prefer, you can divide again into twelve balls to make smaller flatbreads.
- Brush a heavy-based pan with oil and cook one flatbread over a high heat for 1-2 mins on each side, or until golden and starting to puff. Put on a plate and brush with butter. Repeat with the rest of the dough.

An exciting addition to a grilled meal... you can do it all on the grill! Depending on the humidity, you may need to add or subtract a tablespoon of water or flour to achieve a dough that is smooth and only slightly sticky before rising.

- Make the dough by hand - Put the flour in a large bowl, add dry yeast, and mix well with a fork. Add water and mix with a fork or a pair of chopsticks, stirring in a clockwise direction, until water is fully incorporated with flour. Dust both hands with flour and start by using one hand to knead until dough begins to form. The dough should be soft, but shouldn’t stick to the bottom of the bowl. Blend in more flour if the dough sticks to the hands, 1 teaspoon at a time. Dust a cutting board or working surface with flour and transfer the dough onto the cutting board. Continue kneading the dough for a few minutes, until the surface becomes smooth.
- Transfer the dough to a dusted bowl. Cover the bowl with plastic wrap. Rest the dough for 10 to 15 minutes (*Footnote 1).

- Three Cheese Pesto Spinach Flatbread Pizza. Flatbreads are popular in many restaurants because they’re so much easier to make than a pizza. Instead of having to prep the dough hours in advance, you can have a batch ready in just 30 minutes.
- Grilled Shrimp Scampi Flatbread Pizza. Why put out plain old garlic bread when you can serve this tasty shrimp and garlic flatbread instead? You’ll need to make a quick sauce here, using butter, garlic, and chicken stock.
- BBQ Chicken Flatbread Pizza. Just like you can use readymade naan bread to make a stunning flatbread dish, you can also use store-bought pita bread. These are especially great for serving a crowd, as they’re more or less individual portions already.
- Greek-Style Sandwiches with Homemade Gyro Meat. This traditional Greek dish is a step away from the pizza-like flatbreads we’ve been talking about. Instead, this is more like a kebab in how it’s served.
- Rosemary Sea Salt Flatbread. That picture will be in my dreams tonight. I’m such a bread lover that I don’t even need fancy toppings to crave this flatbread.
- Caprese Arugula Flatbread Pizza. As I mentioned above, flatbreads are, well, flat! They’re thin and slightly crisp and typically lower in carbs than a thick slice of pizza.
- Margherita Flatbread Pizza. Margherita is one of the most classic pizza recipes around. It’s simple, clean, and beloved by kids and grown-ups alike. For this recipe, you just need some pizza sauce, mozzarella, and cherry tomatoes for a fresh finish.
- Goat Cheese & Caramelized Onion Pizza. There’s a reason you see this on so many menus these days: it’s utterly scrumptious. Goat cheese is rich, tangy, and beautifully creamy.
- Lemon Artichoke Pesto Chicken Flatbread. Didn’t I warn you that these would get fancy? You certainly wouldn’t see lemon and artichoke pesto and chicken pizza in your local Domino’s!
- Grilled Lemon Chicken Flatbread Wraps. Here’s another kebab recipe using traditional flatbreads, charred meat, and zesty sauces. I prefer this style of wrap because it uses big, juicy chunks of meat.
