HOW TO MAKE BROWN RICE MILK

This originated in Japan, where rice is abundant(although made throughout Africa, Mexico and other countries too). Rice milk is a grain milk made by processing rice. You probably already have the ingredients at home, it's super inexpensive- just a fraction of the price that rice milk sells for at stores! From the Happy Herbivore.

How to Make Brown Rice Milk image

Steps:

  • Bring 1 cup of water to a boil.
  • Add rice and bring to a boil again. Once boiling, cover, reduce heat to low, and simmer until rice is cooked, about 40 minutes.
  • The rice will be soft and waterlogged; drain off any excess water if necessary.
  • Transfer rice to a blender and add 2 cups of warm water.
  • Blend until well incorporated, about 2 to 3 minutes.
  • Add another 1 cup of warm water and blend again. If you prefer an even thinner non-dairy milk, add another 1/2 to 1 cup of warm water and blend again.
  • Let the mixture sit for 30 minutes. Meanwhile, drape cheesecloth over the top of a pitcher or storage container and secure it around with a rubber band. Make sure the cheesecloth drapes down into the container and is not tightly fashioned straight across, as it needs to act as a strainer.
  • After 30 minutes, use a spoon to scoop any residue off the top of your milk mixture (usually a thin film forms during the cooling process). Once that is removed, slowly pour the milk into the container through the cheesecoth. Be sure not to pour all the bits that have collected at the bottom.
  • Optional: Add a few drops of vanilla extract and/or sweetener to taste.

TASTY RICE MILK

I tried several recipes from Recipezaar for rice milk and didn't care for any of them much. I found this one on Mark's Daily Apple in the comments following a listing of condiments recipes. The recipe there calls for 2 Tbsp. of olive oil, but I like it with just a little safflower oil ( the olive oil has such a strong taste). Their recipe also calls for 1/2 tsp. soy lecithin, which I didn't have, so I just did without it.

Steps:

  • bring cooked rice, 2 cups water, and salt to boil, then reduce to simmer for 25 minutes.
  • add honey while the rice/water is still hot.
  • blend above mixture on high until it's smooth.
  • add vanilla, oil and 2 cups of water/ice and blend again.
  • pour this mixture through a fine sieve or cheese cloth to remove rice particles.
  • place mixture into a container with 2 more cups of water/ice.
  • shake well for each use.

Steps:

  • Wash the rice, put in a medium saucepan and add water.
  • Bring to the boil in medium heat, cover the saucepan, cooking until the rice is soft, 15-20 minutes.
  • Add coconut milk and salt, stir well, and reduce heat to low, continue cooking in low heat for another 10 minutes, until the milk has been absorbed.
  • coconut milk is absorbed, and the rice is very soft and creamy. By now rice milk is ready.
  • Transfer the rice milk to a flat plate and fatten down with piece of butter paper.
  • If you like any shape, you can use a cookie cutter, serve with fish, chicken curry, banana.

  • Soak rice in 2 cups (amount as original recipe is written // adjust if altering batch size) very hot (not boiling water) for 2 hours. The rice should be soft but still very raw - you should be able to snap a piece in half with your fingernail without much effort. Drain and add to a high-speed blender.
  • Add water, salt, and any additional add-ins (optional). Top with lid and cover with a towel to ensure it doesn't splash. Blend for about 1 minute until the date specks are very small and the mixture seems well combined. It doesn't have to be 100% pulverized.
  • Scoop out a small sample with a spoon to test sweetness. If it's not sweet enough, add more dates.
  • Pour the mixture over a large mixing bowl or pitcher covered with a thin towel or clean T-shirt. In my experience, it benefits from a double strain through a very fine towel. A nut milk bag lets too much residue through.

  • ADD THE INGREDIENTS. Place the rice, a pinch of salt for flavor (optional of course, but I like it), and the water in a large pan. You can also rinse the rice couple of time before using it.
  • COOK. Overcook the rice, I do the double amount of minutes of how suggested on the package, or at least 10 minute longer. Use a lid, so the water doesn't evaporate too much.
  • COOL DOWN. Allow to cool down the rice for a while, you don't want the liquid too hot enter in contact with your blender. It also make the rice even softer.
  • SEASONING. Add some sugar, I like organic brown sugar. Just keep it plain if you will use the milk for salty dish, like quiches, ricotta, besciamella, soups, etc..
  • FILTER. Filter it…or not. If you cook the rice a lot, and blend it really well, you can definitely skip this tedious step. With brown rice it is may be more necessary, as it have more residual.
  • DONE. Done! Store in a glass bottle in the refrigerator. Shake before drinking. It stay good for couple of days. If you want a thicker milk, just use a little bit more rice, if you want it thinner, use less, or just add some boiling water when you are done making the milk.
