Steps:

  • In large mixing bowl, beat egg yolks and sugar for 10 minutes or until light lemon-colored. Beat in vanilla. Combine cake flour and baking powder; add to egg mixture alternately with water, beating well. Fold in walnuts.
  • In another mixing bowl, beat the egg whites until stiff peaks form; fold into batter. Pour into two greased and floured 9 inch round cake pans. Bake at 350 for 20-25 minutes or until toothpicks come out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely.
  • In small saucepan, whisk the milk and pudding mix. Bring to a boil, stirring constantly. Remove from the heat. Pour into a bowl; press a piece of waxed paper or plastic wrap over pudding. Refrigerate for 30 minutes.
  • In mixing bowl, cream the butter, shortening and confectioners sugar until light and fluffy. Beat in vanilla and cooled pudding. Split each cake into two layers. Place one bottom layer on a serving plate; spread with about 3/4 cup filling. Repeat layers. Garnish with chocolate curls, if desired.

NO-FLOUR CHOCOLATE CHESTNUT TORTE

I have been looking for a recipe for a chocolate chestnut torte since my trip to the Alpine Restaurant in Breckenridge, CO. This looks like it might be it - just in a cake form. I got this from rec.food.recipes, and it is originally from betterbaking.com. I cannot wait to try it. Looks fantastic.

No-Flour Chocolate Chestnut Torte image

Steps:

  • Note: Available in larger supermarkets, ethnic stores and European groceries.
  • Chestnut puree and chestnut cream are usually imported from France.
  • Either product will work well in this recipe.
  • Preheat oven to 350 degrees F.
  • Line a 9 or 10-inch springform pan with a circle of baking parchment.
  • Cake: Prepare melted chocolate.
  • Set aside and allow to cool to room temperature.
  • Using a whisk or in an electric mixer, blend chestnut cream or puree with butter or margarine.
  • Add vanilla, egg yolks and melted chocolate.
  • Blend well.
  • In another clean bowl, with clean dry beaters, whip the egg whites with the salt, just to break up and foam slightly.
  • Gradually, while increasing mixer speed, dust in sugar to form stiff glossy (but not dry) peaks.
  • Fold 1/3 of egg whites into chestnut mixture and work in well to loosen.
  • Gently fold in remaining 2/3 of egg whites in 2 installments, blending well but taking care not to deflate the mixture.
  • Spoon into prepared pan and bake until done, 35-45 minutes.
  • Cake rises somewhat and looks dry and slightly cracked on top when done.
  • Middle should be soft but firm.
  • Cool in pan for 20 minutes, then remove to a wire.

  • Glaze: Bring the whipping cream (or coffee) to a boil and add the chopped chocolate all at once.
  • Remove from heat and stir briskly, using a wire.

Steps:

  • Preheat the oven to 375 degrees F. Line a 10 1/2 x 15 1/2-inch jellyroll pan with parchment and spray with nonstick vegetable spray.
  • In a dry bowl, melt chocolate over barely simmering water. Whisk the eggs and sugar until they hold a ribbon shape for 2 seconds. Whisk in the Coffee mixture. Sift, then fold in the cocoa. Fold in the melted chocolate. Spread in the prepared pan and bake for 9 minutes until set. Let cool.
  • Meanwhile, make the filling. Sift the cocoa and confectioners' sugar into the cream and whip to the consistency of shaving cream. Divide the sheet cake in half. Lightly spread one layer with apricot preserves. Spread on the whipped cream. Lightly spread the other half with raspberry preserves and flip on top of the whipped cream. Refrigerate.
  • Make the Ganache: Put the chocolate in a small bowl. Over medium heat, bring the cream to a scald. Pour the hot cream over the chocolate. Working from the center out, gently stir with a whisk to melt and blend. Continue stirring until smooth. Stir in the nibs, if using. Pour over the cake. Allow cake to chill in the refrigerator for 30 minutes, until chocolate is set.

Hungarian Rich Chocolate Hazelnut Torte image

Steps:

  • Preheat the oven to 350 degrees.
  • Have ready n 8 inch round baking time, buttered and lined with kitchen paper.
  • Melt the butter very slowly over a low heat.
  • Remove from the heat and add the chopped chocolate, stirring all the time so that it melts in the hot butter. Cool.
  • Whisk the egg whites to soft peaks, then keep aside until needed.
  • Whisk the egg yolks and sugar together until thick and pale.
  • Add the chocolate mixture and mix well.
  • Sprinkle in the flour and ground hazelnuts, and mix together carefully.
  • Add the egg whites and fold them in carefully to retain as much air as possible.
  • Pour into the prepared tin and bake for 25 minutes. The cake should be set, but slightly wobbly in the center. Cool in the tin.
  • To prepare the chocolate ganache, heat the cream almost to boiling point.
  • Immediately remove from the heat, and add the chopped chocolate. Stir until amalgamated.
  • Cool and they pour over the cake to glaze. Allow to set.
  • To make the hazelnut topping, place the sugar and 3.5 ounces water in a saucepan and cook until lightly caramelized.
  • Remove from the heat and add the whole roasted hazelnuts.
  • Stir briefly to coat.
  • Using tong, and working quickly, remove the sticky nuts in clusters, an place on lightly oiled baking paper to cool.
  • Top the cake with hazelnut clusters and serve.
