Huntsman Burger Recipes
PASTRAMI BURGER
The pastrami burger is a Utah staple, but it originated in California in the 1950s when Jewish locals started adding deli meat to burgers. Chef James Katsanevas served a version in Anaheim in the early '70s, and a decade later his family opened Crown Burgers in Salt Lake City with a pastrami burger on the menu. It's topped with Thousand Island dressing, better known in Utah as fry sauce.

Steps:
- Form the beef into four 4-inch-wide patties (1/2 to 3/4 inch thick); season with salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the burgers and cook until browned, 2 to 3 minutes. Flip and cook 1 minute, then top each burger with a slice of cheese and one-quarter of the pastrami. Cover and cook until the cheese melts and the pastrami is hot, about 2 more minutes for medium.
- Serve the burgers on the buns with lettuce, onions, tomatoes and Thousand Island dressing.

No more dry, lackluster burgers. These are juicy, and spices can be easily added or changed to suit anyone's taste. Baste frequently with your favorite barbeque sauce. If you find the meat mixture too mushy, just add more bread crumbs until it forms patties that hold their shape.

- Preheat grill for high heat.
- In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.
- Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.

- Dice 3/4 pound wild salmon; puree half with 2 scallions. Mix with the remaining diced salmon, 1/4 cup breadcrumbs and 4 ounces chopped smoked salmon. Shape into 2 patties; make an indentation in the centers. Heat a cast-iron skillet over medium-high heat; sprinkle the skillet with salt. Cook burgers 4 to 5 minutes per side. Serve on sesame buns with sauteed spinach and mayonnaise mixed with mustard.
