HIDDEN PEAR SALAD

Light and fluffy, this colorful salad is a very flavorful family favorite. When I made it for my husband's family before we were married, we all joked about not being able to find any pears, so the name stuck.

Steps:

  • In a saucepan, bring pear liquid to a boil. Stir in gelatin until dissolved. Remove from the heat; cool at room temperature until syrupy. Meanwhile, puree pears in a blender. , In a bowl, beat cream cheese and lemon juice until fluffy and smooth. Add pureed pears and mix well. Prepare whipped topping according to package directions; fold into pear mixture. Fold in cooled gelatin. , Pour into a 4-1/2-cup mold that has been coated with cooking spray. Chill overnight. Just before serving, unmold salad onto a lettuce-lined platter.

HALLOUMI AND PEAR SALAD

This gorgeous salad was thought up by our friend Imppa. I have since given this recipe to numerous people - I think we've served this to everyone who's visited since Imppa did and made this salad for us! This recipe is really more of an idea, so you can adjust the measurements to your liking; just don't overdo the cherry tomatoes, as they're only supposed to be a part of a simple salad background for the glorious union of halloumi cheese and pears! For a luxurious touch, flambé the pear cubes with cognac.

Halloumi and Pear Salad image

Steps:

  • Shred rinsed lettuce and arugula and arrange on a plate (this salad looks prettier on a flat surface, so for presentation, use a plate rather than a bowl).
  • Halve cherry tomatoes, arrange on top of salad.
  • Mix olive oil and balsamic vinegar, drizzle on top of the salad. Season with salt and pepper, if you prefer.
  • Peel pear(s) and cut into small cubes. Heat butter in a pan and cook pear cubes until warm and soft. Let cool a little and pour on top of the salad.
  • Slice halloumi cheese (soak in cold water first for 5-20 minutes if you want to reduce the saltiness). Heat butter in a pan and fry the slices until browned on both sides; arrange on top of the salad.
  • Serve immediately while the cheese is still warm.

Steps:

  • Drain pears and reserve 1 cup syrup; if needed, add water to equal 1 cup.
  • In a saucepan over medium-high heat, combine syrup and gelatin. Bring to a boil and stir until gelatin is dissolved. Remove from heat and chill until partially set.
  • In a large bowl, blend the cheese and pears until smooth. Add gelatin mixture, pecans and whipped topping; blend until smooth. Pour into mold or leave in bowl. Chill for 3 hours or until firm.
