IHOP German Pancakes Recipe - (3.6/5) image

Steps:

  • 1. Preheat oven to 475. 2. In a medium bowl, beat eggs with an electric mixer. Mix in milk, cream, sugar, vanilla and salt. Mix until sugar is dissolved. Sift in flour and mix until smooth. Let batter rest for about 10 minutes. 3. Coat the bottom of a 9- or 10-inch oven safe skillet (cast Iron is best) with the melted butter. Pour batter into pan and bake for 14-16 minutes or until golden brown on top and dark brown around the edges. Pancake will rise substantially while cooking. Remove the pancake form the oven and let it sit for a minute. Loosen the pancake around the edges with a spatula, then slide it out of the pan onto a plate. Dust with powdered sugar and serve with butter and syrup on the side.

  • Preheat oven to 350 degrees F (175 degrees C). Melt butter in a medium baking dish.
  • In a medium bowl, mix flour, milk, eggs and salt. Pour the mixture into the prepared baking dish.
  • Bake on center rack in the preheated oven for 30 to 40 minutes, until golden brown.

I got this recipe from the "Top Secret Recipes" cook book, by Todd Wilbur. My stepson who normally hates home made pancakes loves these! I ALWAYS double this recipe. You can freeze left over pancakes (if there are any), or save the batter in the fridge for up to 3 days. Then make fresh pancakes again. I have made home made pancakes for years. This is the very best pancake recipe I've ever made! My family loves these pancakes. It is a popular request.

Steps:

  • Preheat a skillet over med heat. Use a pan with a nonstick surface or apply a little nonstick spray.
  • In a blender, or with mixer, combine all of the remaining ingredients until smooth.
  • Pour the batter by spoonfuls into the hot pan, forming 5 inch circles.
  • When the edges appear to harden, flip the pancakes. They should be light brown.
  • Cook on the other side for same amount of time, until light golden brown.

  • Preheat oven to 400°. Place first 4 ingredients in a blender; process just until smooth., Pour melted butter into a 13x9-in. baking dish; tilt dish to coat. Add batter; bake, uncovered, until puffed and golden brown, about 20 minutes., Meanwhile, place butter, sugar, buttermilk, corn syrup and baking soda in a small saucepan; bring to a boil. Cook, uncovered, 7 minutes. Remove from heat; stir in vanilla., Remove pancake from oven. Dust with confectioners' sugar; serve immediately with syrup and, if desired, fresh blueberries.
