BANANA AND NUT BREAD

This banana nut bread smells heavenly in the oven and comes out moist and chock-full of flavor and crunchy nuts.

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. Bake 65-75 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool. Freeze option: Securely wrap cooled loaf in plastic wrap and foil, then freeze. To use, thaw at room temperature.

Steps:

  • 1. Sift dry ingredients into a large bowl.
  • 2. In a separate bowl, cream butter, white sugar and brown sugar. Add eggs, one at a time, mixing after each addition. Mix in mashed bananas and vanilla.
  • 3. Mix dry ingredients into wet ingredients in 3 batches. Stir just until blended. Stir in nuts.
  • 4. Pour into 2 greased and floured 9 X5 inch loaf pans. Top with cinnamon-sugar mixture. (optional)
  • 5. Bake at 350 degrees for 55-60 minutes or until a knife inserted into the middle comes out clean.
  • 6. Cool loaves in pans on wire rack for 5-10 minutes. Turn out onto a cooling rack; cool completely. Wrap in aluminum foil when cool.
  • 7. Refrigerate the loaves for 2 hours or more before serving.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Beat together the cream cheese, sugar, butter, eggs, and banana in a large bowl until very smooth. Stir in the flour, baking powder, baking soda, and walnuts until just combined. Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
