INFALLIBLE RICE

I love to bake rice with other dishes in the oven and this is my favorite! You might want to add a little more water or broth depending on the type of rice you use. It is quick and delicious.

Steps:

  • Melt butter in skillet.
  • Add onions and sauté until soft.
  • Add any herbs or spices of choice (you don't have to add anything and it will still turn out well!) Put chicken broth, rice, and onion mixture into a a casserole dish.
  • Cover and bake at 350°F for 45 min to 1 hours. (Depending on the type of rice you use, this could only take 35 minutes so you should watch the liquid in this).

  • Sauté onion in butter until transparent. Add rice and hot broth. Bring to a boil on top of range. Cover and place in 325° oven for 20 minutes. Serves 4 hungry or 6 polite people. Fun Fact: According to legend, rice was introduced to America around 1694 when a ship bound for England was forced to stop in Charleston for repairs. The ship's captain bartered for the costly repairs with a small portion of his cargo of rice. This inexpensive portion of a rather unexciting cargo was the beginning of the rice fields which were to line the swampy riverbanks from Charleston, South Carolina, to Savannah, Georgia.

Steps:

  • Saute the onions in the butter. Combine the onions, rice and broth in a casserole dish (8 X 8 is good). Cover tightly with aluminum foil. Bake at 325 degrees for 20 minutes.
