IRISH SODA BREAD FROM COUNTY CORK

This is my mother's recipe. She makes it several times a week for some function or another. My sister loves this so much she has to control herself or she would eat a whole one with a stick of butter! I usually only make this easy soda bread for events that my mother can't come to! Slice into wedges, butter, and enjoy!

Irish Soda Bread from County Cork image

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch round baking dish.
  • In a large bowl, cut together the self-rising flour, sugar, and butter with a pastry cutter until the mixture resembles coarse crumbs. Stir in the raisins. In a separate bowl, whisk together egg with 1 cup of milk. Lightly mix the milk mixture into the flour mixture until it holds together. Place dough in prepared baking dish, and brush top with 1 tablespoon of milk for a nice golden brown crust.
  • Place the bread into the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and bake for 1 hour. Let cool before serving.

This is the best Irish Soda Bread recipe ever! It comes out crunchy on the outside and soft, sweet and moist inside. I got this from an old Irish cookbook in high school to make for an Irish feast we had in history class.

Steps:

  • Combine flour, sugar, baking powder, baking soda, and salt in a large bowl; mix well and add raisins.
  • Beat eggs in a smaller bowl.
  • Add buttermilk to eggs and beat until combined.
  • Add egg mixture to butter and dry ingredients.
  • Stir until moistened.
  • Pour into greased layer cake pan or pie pan. (Dough will be very thick and dense).
  • Bake at 350 degrees Fahrenheit for 1 hour.
  • *Delicious served hot with butter!*.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a heavy pan.
  • Mix flour, sugar, raisins, caraway seeds, baking powder, baking soda, and salt in a large bowl. Add eggs, buttermilk, and milk to the flour mixture; stir until evenly incorporated. Transfer dough to the prepared pan.
  • Bake in preheated oven until when the bread is tapped on top it sounds hollow, about 75 minutes.
