EASY IRISH COLCANNON
Traditional Irish potato dish, very easy to make. Bear in mind that the UK and Ireland weren't exactly known for their cuisine, but for authenticity, this is what you want. For unauthentic but enhanced flavor, you can add bacon bits, or Cheddar cheese, or both.

Steps:
- Place the potatoes, cabbage, and green onions into a large sauce pan, fill with water, and bring to a boil. Reduce heat, cover, and simmer until the potatoes are tender, about 20 minutes.
- Drain the vegetables and place into a large bowl. Mash the potatoes and vegetables with the butter using a fork until the mixture is chunky, pouring in half-and-half gradually as you mash. Season with salt and pepper, and serve.

ENGLISH SCONES
A delicious recipe from my British mother in law! These are awesome for breakfast or snack topped with whipped cream and jam or simply with butter. For extra fluffy scones, handle the dough as little as possible.

Steps:
- Combine flour and baking powder.
- Cut in the butter until crumbly and butter is pea-sized or smaller.
- Stir in the sugar and salt.
- Stir in the milk.
- Stick the dough together and turn out on a lightly floured surface.
- Knead 4-5 times and roll out to 3/4 inch thick.
- Using a 2 inch round cookie cutter, cut out as many scones as you can. Gather the scraps and roll out again. Cut out as many scones as you can. With the remaining scraps, form a ball and gently cut an "X" on the top.
- Place all scones on an un-greased baking sheet. Brush the tops with an egg wash.
- Bake at 450F fro 8-12 minutes until the tops are golden brown.

IRISH CRAN OAT SCONES
I found this recipe on the Food Network site. It came from the show Calling all Cooks. These are easy and very good!! You can also brush the tops of the scones with cream and sprinkle with turbinado sugar before baking to add a little crunch and some extra sweetness. (we thought they were perfect...with the added sugar crunch!)

Steps:
- Preheat the oven to 375 degrees F.
- In a bowl, combine the flour, oatmeal, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut the cold butter into the dry ingredients until the dough is crumbly.
- Fold in the cranberries we also like other dried fruits such as chopped apricots etc. Add the buttermilk and stir lightly with a wooden spoon until the dough comes together to form a ball, (The dough will be sticky, but they warn not too over work dough)
- On a lightly floured surface, pat the dough into a large circle about 2 inches thick. Cut the dough into wedges.
- With a spatula, transfer the wedges to a baking sheet lined with parchment and bake for 22 minutes, or until the edges are lightly browned.
- Cool on a wire rack.
- Best served warm and on the day they are made.

- Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat to medium; cook, covered, until potatoes are almost tender, 8-10 minutes., Add cabbage and onion; cook, covered, until cabbage is tender, 5-7 minutes. Drain; return to pot. Add salt and pepper; mash to desired consistency, gradually adding butter and milk.

BUTTERMILK SCONES
This basic scone recipe is incredibly simple and incredibly tasty! Use any kind of dired fruit you like (I'm partial to cherries and mango, myself, but I've never met a fruit scone I didn't like!) If you don't have buttermilk, just use 1 T. vinegar plus enough milk or soymilk to measure 1 cup (try a fruit infused vinegar for variety!).

Steps:
- Combine flour, baking powder, soda, and salt in a medium bowl; gently whisk together till well combined.
- Cut in butter with two knives till mixture resembles small floury peas. Stir in dried fruit till it's well coated with flour (this prevent clumps of fruit from forming in the scone).
- Combine buttermilk, egg, and vanilla; whisk till well blended. Stir into dry ingredients, stirring gently till soft dough forms.
- Turn dough out onto parchment lined baking sheet and form into a 8-inch round. (May also form into individual scones if you like).
- Brush top of scone with a little milk and sprinkle lightly with granulated sugar. (If you sprinkle heavily, a sugary crust will form).
- Bake scone at 375 deg. F. for 12-15 minutes, till scone tests done. Let cool a couple minutes before serving.
