ITALIAN MEATLOAF WITH FRESH BASIL AND PROVOLONE
Meatloaf sandwiches are one of the best reasons to make this dish. Serve leftover slices on sourdough bread with mayonnaise, Dijon mustard, leaf lettuce and red onions.

Steps:
- Combine boiling water and tomatoes in a bowl; let stand 30 minutes, or until soft.
- Drain the tomatoes and finely chop.
- Preheat the oven to 350°F.
- Combine ketchup, breadcrumbs, and the next 6 ingredients in a large bowl.
- Add the tomatoes to the meat mixture.
- Shape the meat mixture into a 9x5-inch loaf on a broiler pan, coated with cooking spray.
- Spread 1/3 cup ketchup over meatloaf.
- Bake at 350°F degrees for 1 hour.
- Let stand 10 minutes before slicing 12 slices.
- Serves 6.

BEST EVER ITALIAN-STYLE MEATLOAF
This is the only meatloaf recipe I use. The cheese makes the meatloaf very moist and tasty! The herbs impart a wonderful flavor as well! I freeze this after slicing in a container and reheat in the microwave for a quick dinner.

Steps:
- Preheat oven to 350°F.
- Combine all ingredients in a large bowl, mix well.
- Press into a 9x5 inch loaf pan, and cover with foil.
- Bake for 1 hour, uncover and pour extra sauce out.
- Return to oven and bake for 5-10 minutes.
- Leave in pan for 10-20 minutes, this will prevent the meatloaf from falling apart when cut.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
- Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

- Combine water and tomatoes in a bowl; let stand 30 minutes or until soft. Drain tomotoes; finely chop. Set aside. Preheat over to 350 degrees. In a large bowl, combine the 1/2 C. ketchup, the bread crumbs, onion, basil, provolone, egg whites, garlic and beef. Add tomatoes to mixture. Shape meat into a 9 X 5 inch loaf and place on a broiler pan rack coated with vegetable oil spray. Spread the 1/3 C. ketchup over loaf. Bake in preheated over 1 hour or until thermometer registers 160 degrees. Tent with foil; let stand 10 minutes before slicing.
ITALIAN CHEESE-STUFFED MEATLOAF
Cut slices of this juicy meatloaf, intensely flavored with herbs and prepared roasted peppers, to reveal a luscious center of melted cheeses.

- Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
- On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
- Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
- Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.
