- Pierce 4 large russet potatoes with a fork. Bake directly on the oven rack at 350 degrees until tender, about 1 hour. Let cool, then quarter lengthwise and scoop out the flesh, leaving a 1/4-inch shell. Brush both sides with melted butter and season with salt and pepper. Bake, skin-side up, at 450 degrees until crisp, about 20 minutes. Add your favorite team toppings. (For cheesy skins, flip the baked shells over before topping, sprinkle with 1 cup grated cheddar cheese and bake an extra 5 minutes.)

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking pan.
- Pierce potatoes with a fork. Microwave the potatoes on high until they are soft; approximately 10 to 12 minutes.
- Cut the potatoes in half vertically. Scoop the inside out of the potatoes, until 1/4 inch of the potato shell remains.
- Heat oil to 365 degrees F (180 degrees C) in a deep fryer or a deep saucepan. Place the potatoes in hot oil, fry for 5 minutes. Drain potatoes on paper towels.
- Fill the potato shells with cheese and bacon bits. Arrange them in the prepared baking pan.
- Bake for 7 minutes, or until the cheese is melted. Serve hot with sour cream.

- Bake potatoes at 425 degrees Fahrenheit for 40-50 minutes until tender.
- Cut into halves.
- Scoop out potato leaving 1/2 inch thick shells.
- (Save the potato flesh for another use like mashed potatoes or pancakes).
- Brush both sides of the skins with melted margarine.
- Bake at 450 degrees Fahrenehit for 10-15 minutes until crisp.
- Meanwhile, brown sausage and drain.
- Stir in tomato sauce and spices.
- Fill potato shells with mixture.
- Top with cheese.
- Bake about 2 minutes until cheese is melted.
- Serve immediately or cool and freeze for later.

- Microwave potatoes on HIGH for 8 minutes, turning once; slice in half lengthwise.
- Combine oil, garlic and italian seasoning in small bowl.
- Brush cut surfaces of potato halves with half of the oil mixture.
- Grill potatoes, cut side down, on a lightly gre4ased grill rack over medium heat for 5 to 7 minutes or until tender.
- Scoop out insides of each potatoe half, leaving a half-inch-thick shell.

VEGETARIAN CLASSIC POTATO SKINS
For me, this is a make-ahead recipe so the taters can cook while I'm working and I can freeze the finished product so I can easily nuke or toast them for a fast meal in the future. But these are also so delicious fresh out of the oven, I can never resist not eating at least one! :) Please note that these measurements are approximate. Sometimes I can make more than 8 potatoes but only about 4 large ones, or 6-8 little ones, will fit in my convection oven-- this recipe is to give you more of an idea of what to buy and how to make them rather than be exact.

- Scrub the potatoes, and bake them at 375 for about 1 hour-90 minutes. Lower the oven temp to 350 when they're done.
- Let the taters cool for about 10-15 minutes, until they are cool enough to handle.
- Slice the taters in half and scoop the "meat" out. Put the meat aside to use for mish mash, home fries, potato farls, or another potato dish you'd like to make.
- Fill the hollowed tater halves with broccoli and cheeses.
- Put the filled taters back in the oven, preferably on some foil or a foiled baking sheet in case there's cheese run-off.
- Bake for 15-20 minutes or until the cheese is browned. Salt and pepper to taste, and if you like, serve with some sour cream.
- Variation tip: replace the broccoli with some black or pinto beans to make tex-mex potato skins!

HOMEMADE POTATO SKINS
Homemade potato skins are great while watching football or serving at a casual party. There is absolutely no need to deep fry them. As long as the skins are cooked at a high heat, they will be perfectly crispy! After eating these my boyfriend proclaimed, "no need to spend ten bucks at a restaurant anymore!"

- Preheat the oven to 400 degrees F (200 degrees C). Rub potatoes with olive oil and place on a baking sheet.
- Bake in the preheated oven until tender, about 1 hour. Remove from the oven and let sit until cool enough to handle, about 10 minutes. Increase the oven temperature to 450 degrees F (230 degrees C).
- Cut potatoes in half lengthwise. Scoop out the flesh, leaving 1/4 inch on the skin. Brush canola oil all over the potato skins, outside and inside, and sprinkle with salt. Reserve flesh for another use.
- Bake skins in the preheated oven for 10 minutes. Flip and continue to bake for 10 minutes more. Remove from the oven. Turn on the oven's broiler.

- Preheat oven to 350°. Clean potatoes with a vegetable brush. Place potatoes on middle rack until fork tender, about 1 hour. Remove from oven and let sit until cool enough to handle. Turn oven to 450°. While they are cooling, combine olive oil and smashed garlic in a small bowl. Cover with a paper towel and microwave for 30 seconds. Remove the garlic cloves and add Italian seasoning, salt and pepper. Stir until combined. Set aside. Cut potatoes in half, lengthwise, and spoon out the flesh, leaving about a ¼-½" shell. Brush olive oil mixture over top and bottoms of potatoes. Place on an oiled baking sheet in oven for 10-12 minutes until potato skins are firm. In a medium skillet over medium high heat cook sausage. Drain. Place in bowl immediately add sun-dried tomatoes and ½ cup cheese. Stir well to combine. Remove potatoes from oven when done and scoop sausage mixture into potatoes evenly. IRISH POTATO SKINS
It was Superbowl Sunday and we needed some snacks so I threw this together. It turned out very well and they didn't last long.

- Clean potatoes and pierce the ends with a fork.
- Place the potatoes (two at a time) in the microwave to cook for 3 minutes or until soft.
- Split the potatoes and scoop half of the inside out with a spoon.
- Season with seasoning salt, onion salt, black pepper, butter, crushed red pepper and minced garlic and place in oven at 400F for 10 minutes.
- Remove and place crushed cooked bacon on potatoes with a layer of half of your cheese and then sour cream.
- Place back in the oven for 10 minutes.
- Remove and top with the remaining cheese, black pepper (to taste) and any remaining bacon.
- If potatoes are drying out, top with olive oil and place back in oven for 10 minutes.
- Cool for a few minutes and serve (preferably with football on the television and a beer in one hand).

- Pierce potatoes deeply with a fork and bake for 45 minutes or until tender.
- Increase the heat of the oven to 375 degrees F (190 degrees C).
