Made with mozzarella cheese and Italian seasoning, this is a different twist on everyday meatloaf! Enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
- Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

ITALIAN MEATLOAF

- Preheat oven to 350 degrees F.
- Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
- Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
- Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.
ITALIAN MEATLOAF WITH GARLIC HERB GLAZE

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, mozzarella, sundried tomatoes, Parmesan, parsley, basil, oregano, Worcestershire, eggs, onion, 1/4 cup of the ketchup, half of the garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands and mix together until combined well.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9-by-5-inches. Bake the meatloaf for 30 minutes.
- Meanwhile, stir together the vinegar, brown sugar, Italian seasoning, the remaining 1/4 cup ketchup and garlic in a small bowl. Brush the top and sides of the meatloaf all over with the garlic-herb glaze. Continue to bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- Combine beef, bread crumbs, Parmesan cheese, eggs, Worcestershire sauce, garlic, and Italian seasoning in a large bowl. Season with salt and black pepper. Transfer mixture to a 9x5-inch loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

The original recipe was found in the 1998 edition of Taste of Home's " The Best of Country Cooking ".I did add alot of different ingredients that wasn't in the original, but I still wanted to thank Kim McMurl of Fargo, North Dakota for sending the original into them.Make sure to let meatloaf " rest " for a few minutes, so it won't fall apart when you slice it. I have made this meatloaf for years, and my family and friends just love. One day while thumbing through my cookbooks I discovered a recipe with this delicious topping. Have made it like this ever since. Recently made with the addition on 1/2 large onion (or 1 medium) chopped.

ITALIAN MEATLOAF
There are other italian meatloaf recipies posted, but this one is a little different. I don't like meatloaf, but this is great. I got it from food network kitchens. My husbands co-workers rave about it.

- Special Equipment: 4-inch round biscuit cutter, or tuna or other can, top and bottom removed.
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
- Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
- Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
- Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.
- Cook's Note: The pancetta adds a nice flavor note to the meatloaves, but you can leave it out--shape the meat in the cutter right on the baking sheet.

BEST EVER ITALIAN-STYLE MEATLOAF
This is the only meatloaf recipe I use. The cheese makes the meatloaf very moist and tasty! The herbs impart a wonderful flavor as well! I freeze this after slicing in a container and reheat in the microwave for a quick dinner.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- Heat 1 tablespoon oil in a skillet over medium heat. Add mushrooms, bell pepper, and onion; cook and stir until just soft, 3 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Set mixture aside and let cool.
- Meanwhile, mix bread crumbs, parsley, egg, and Italian seasoning together in a large bowl. Add cooled veggie mixture; mix well. Gently mix in ground pork and ground beef. Place mixture into the prepared loaf pan and form into a loaf shape.

Return to the oven and continue to bake, brushing with glaze every 10 to 15 minutes, until no longer pink in the center, about 30 minutes more. This is favorite meatlof concoction. The Good Seasons Italian dressing mix comes in handy for so many different creations. I hope you enjoy this as much as I do. The tomato sauce mixture also makes a great gravy to go on mashed potatoes as a side.

- Preheat over 400 degrees.
- Combine tomato sauce, brown sugar and mustard in a small sauce pan. Add salt and pepper to taste and simmer on low while preparing meatloaf.
- Combine ground meat with Italian dressing mix, salt, pepper, garlic and celery seed until mixed thoroughly.
- Add crackers and eggs and form into a loaf.
- Place meatloaf on a a greased baking sheet and cook 25-30 minutes. Top with 1/2 of the tomato sauce mixture and cook an additional 10-15 minutes.
- Use the remaining tomato sauce to top the meatloaf slices when done.
- Best served with mashed potatoes and green beans. Enjoy!
