FAMILY FAVORITE BAKED ITALIAN SUB
This is one of my favorite weekend meals when I want something quick and satisfying, but simple with little clean up. A family favorite for Sunday football or to pack and take with to our local sporting events. Fun for fall picnics. Great for working moms, too. - 1. Slice French bread lengthwise (or use 6 hoagie rolls). On bottom bun, layer meat, cheese, then veggies. (Veggies last if you plan to open after baking to add shredded lettuce.) Spread top bun generously with the sauce (dressing) of your choice. Wrap tightly in foil.
- 2. Place on cookie sheet and bake at 350-375 degrees for 12-15 minutes, or until cheese is melty. Carefully open foil and add shredded lettuce, if desired. Cut into individual servings or cut into 1 1/2" slices secured with a sandwich pick to serve as an appetizer for football parties.

Italian Layer Bake is a Mediterranean delight. This recipe features layers of Italian meats, peppers, and bubbly cheese under a golden crust. Mmm!

- 1. •Preheat oven to 350 degrees F. Unroll crescent roll dough without separating triangles. Separate dough into 2 squares along center cut line. • Place 1 square of dough into an 8-inch square baking dish; using your fingertips, press dough to fit bottom of dish. • Layer with half the turkey, ham, salami, Swiss cheese, and roasted peppers. Pour half of beaten eggs over peppers and repeat with remaining meats, cheese, and peppers. • Place remaining square of dough over peppers. Pour remaining beaten eggs over dough and cover lightly with foil. • Bake 20 minutes, remove foil, and bake an additional 20 to 22 minutes, or until golden and heated through. Let cool 15 to 20 minutes then cut and serve

- Cook spaghetti according to package directions. Meanwhile, in a large nonstick skillet over medium heat, cook the beef, onion and garlic until meat is no longer pink; drain. Add the tomato sauce, parsley and oregano; heat through. , In a large bowl, combine the cottage cheese, 2 cups mozzarella cheese and 1/4 cup Parmesan cheese. Drain the spaghetti., Spread 1 cup meat sauce into a 13x9-in. baking dish coated with cooking spray. Layer with half of the spaghetti, cheese mixture and remaining meat sauce. Repeat layers (dish will be full). , Cover and bake at 350° for 45 minutes. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5-10 minutes longer or until heated through and cheese is melted.
