ITALIAN-INSPIRED CASSEROLE

Steps:
- In a Dutch oven over medium heat, cook sausage, beef, onion and green pepper until meat is no longer pink; drain. Add the tomato sauce, tomato paste, water and seasonings; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Add corn and olives. Cover and simmer for 5 minutes. Stir in noodles. , Pour into two greased 13-in. x 9-in. baking dishes. Top with cheese. Cover and bake at 350° for 25-30 minutes or until heated through.

SWEET POTATO CASSEROLE DESSERT
Fluffy sweet potatoes mixed with butter, sugar, and vanilla, and baked with a crunchy pecan streusel topping. This recipe was given to me by my brother-in-law.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
- Bake for 25 minutes in the preheated oven, or until golden brown.

INCREDIBLE POTATO CASSEROLE
This recipe has been in the family for years and is always a huge hit. The potatoes can be substituted for frozen hash browns making it really easy to prepare and still tastes great.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2 quart casserole dish.
- Place whole potatoes in their skins into a large pot of boiling water; cook for 25 to 30 minutes. Remove potatoes, and discard water. When cool enough to handle, peel potatoes, and grate into a medium bowl.
- Melt 1/4 cup butter in a large skillet over medium heat. Stir in soup; cook until soup begins to bubble. Remove from stove, and mix in sour cream, green onion, and cheese. Stir in potatoes. Pour mixture into casserole dish.
- In a resealable bag, shake together the cornflake crumbs and 2 tablespoons melted butter. Sprinkle over top of casserole.
- Bake in a preheated oven 45 minutes.

Another do ahead casserole. Great for a buffet, especially around Cristmas , the colored peppers show through. If you wish lightly saute the peppers with the onion and mushrooms. I prefer them crisp.Nicely flavored combination.

- After cooking the potatoes let them stand for 5 minutes before slicing.
- Place the sliced potatoes in a 9" quiche dish or other oven proof dish.
- Saute the onions& Mushrooms until just soft.
- Beat together the eggs, cream,salt& pepper.
- Cover the potatoes with the peppers, mushrooms, onion and half the bacon.
- Pour in the beaten egg mixture.
- Cover with foil and bake at 350F degrees for apprx 35 minutes.
- Uncover add the rest of the bacon.
- Return to oven uncovered for about 10 minutes or until you can insert a knife and it comes out clean.
- Watch your bacon doesn't get too brown, if it starts to, loosely place foil over top.
- Casserole should be a nice golden color.

- Sauté onion and garlic in olive oil in medium nonstick fry pan until onion is soft.
- Combine evaporated milk and flour in small bowl, whisk until smooth.
- Slowly add to onion, stirring constantly, until boiling and thickened.
- Stir in mustard, salt, basil, sugar and oregano.
- Arrange 1/2 of the potatoes in a greased 2 quart casserole.
- Sprinkle with pepper.
- Layer with 1/2 of the tomato slices.
- Cover with 1/2 of the onion sauce.
- Repeat layers.
- Sprinkle with parmesan cheese, cover and bake in 375°F degree oven for 45 minutes.
- Remove cover and bake for 20 to 30 minutes more until golden brown and potatoes are soft.

- Cook ground chuck , onion and garlic in a large skillet over medium heat until meat is browned, stirring to crumble meat; drain. Add spaghetti sauce, water, basil, oregano, and pepper, stir well.
- Spoon 1/3 of meat mixture into a lightly greased 13 x 9 x2 inch baking dish. Top with half of potato slices; cover with 1/3 of meat mixture. Add remaining potato slices and remaining meat mixture. Cover with aluminum foil.
- Bake at 375°F for 1 hour or until potatoes are tender. Remove foil; sprinkle cheese over casserole. Bake an additional 5 minutes or until cheese melts.

It is super easy to throw together, and uses pantry staples most of us have on hand. I really enjoyed it with tuna, but I think it would be just as good Vegetarian or with cooked chicken, cooked ground beef or cooked sausage. I made this pretty mild, but it can easily be spiced up with fresh or canned jalapenos or added red pepper flakes or hot sauce. Feel free to use reduced-fat cheese.

- Preheat oven to 350°F Grease a 13x9 baking dish.
- Mix together the first 8 ingredients through the first 2 cups of shredded cheese.
- Mix together the sour cream, salsa, cilantro, garlic, cumin and salt and stir into the potato mixture until it's well coated.
- Spread mix into prepared baking dish and top with remaining cup of cheese.
- Bake for 60 minutes.
- Remove from oven and top with fresh chopped tomatoes and sliced green onions.
- Can serve right away, but sauce will thicken more if you let it sit 10-15 minutes.
- Serve with sour cream and hot sauce. This is really good served alongside a crisp salad.
