TROPICAL MAHI MAHI
Bob Gebhardt's favorite foods to prepare are fish and seafood. "Tropical Mahi Mahi is a creation of mine that combines-and adds to-two Hawaiian recipes. The tropical fruit and cilantro make it a wonderful, aromatic dish.

Steps:
- In a large resealable plastic bag, combine the flour, 1/2 teaspoon seasoned salt and 1/4 teaspoon pepper; add fillets. Seal bag and turn to coat. , In a large skillet, heat butter and oil. Cook mahi mahi over medium-high heat for 2-3 minutes on each side. Remove and keep warm. , Saute cilantro in pan drippings for 1 minute. Add grape juice; cook until reduced by half. Add cream; cook until reduced by half. Stir in the fruit and remaining seasoned salt and pepper; heat through. Serve with mahi mahi; sprinkle with macadamia nuts.

JAMAICAN-ME-NUTS! MAHI-MAHI TACOS WITH TROPICAL FRUIT SALSA
This buttery sweet fish is grilled to perfection with our own jerk seasoning! Served on a warmed flour or corn tortilla, topped with our special Tropical Fruit Salsa, avocado, piled high with cabbage, jicama and lime sour cream, makes our Mahi-mahi Tacos quite a catch! Steps:
- Brush fillets with canola oil and sprinkle evenly both sides, with jerk rub seasoning.
- *Use 1 teaspoons seasoning per side per each fillet. More or less to taste.
- Rub into fish evenly to coat.
- Place fillets on hot grill and grill 3-5 minutes per side or til done and flakes easily with a fork.
- Warm tortillas on grill.
- Cut fillets into chunks, or coarsely shred with a fork.
- Divide fish evenly onto 8 warmed tortillas.
- Top each with fruit salsa, a slice of avocado, shredded cabbage, jicama, and top with lime sour cream.
- Lime sour cream:.
- Mix sour cream, lime juice and zest in small bowl.
- Garnish with additional cilantro if desired.
- *Note: If scotch bonnet or habanero peppers are too hot for your tastebuds, a red jalapeno can be substituted! They are actually quite mild.
- Enjoy!

MAHI MAHI TACOS

Steps:
- Combine all of the dry ingredients for the rub and mix well. Set aside. Brush the soy sauce over the flesh side of the fillet. Let set in the refrigerator for 1 hour. Remove from refrigerator and brush with the oil. Sprinkle with desired amount of dry rub. Let stand for 15 minutes before grilling.
- Cook the fillet with the flesh side facing the heat source. Cook until fork tender or 8 to 10 minutes or until just opaque. Cooking time will depend on how hot the heat source is. Let stand for about 5 minutes after removing from the heat. Flake the fish with a fork into a taco shell and top with Pico de Gallo. Add cilantro for garnish.
MIXED FRUIT SALSA
I got this recipe out of a Taste of Home Summer Appetizer magazine I bought. It looks fabulous and I want to serve it for a get together I am having.

- In a large bowl, combine the first six ingredients; set aside.
- Brush both sides of tortillas with butter. Combine the sugar and cinnamon; sprinkle over both sides of the tortillas. Cut into six wedges.
- Place on ungreased baking sheet. Bake at 400 degrees for 6-8 minutes on each side or until crisp.
- Drain salsa; serve with tortilla chips.

- Preheat oven to 350°F.
- Mix the seasoning .
- Sprinkle the seasoning on fish.
- Heat oil in pan and sear the fish on both sides.
- Put in preheated oven for 4-5 minutes. Fish should be firm to the touch.
- Arrange the fish on the plates and put the salsa on top of the fish.

- In a resealable plastic bag, combine 3 tablespoons lime juice, water, 1 tablespoons cilantro, garlic, cumin and cayenne. Add fish, seal bag and turn to coat; refrigerate, turning once, 1 hour.
- In a bowl, combine vinegar, oil, 2 teaspoons honey, 1/4 teaspoons salt and 1/4 teaspoons pepper. Add cabbage; toss well.
- In another bowl, combine sour cream, 1 tablespoons lime juice, zest, 3/4 teaspoons honey and 1/2 teaspoons salt.
- Heat grill. Remove fish from marinade; season with remaining 1/2 teaspoons salt and remaining 1/4 teaspoons pepper. Grill, turning once, until just cooked through and lightly charred, 4 minutes per side.
- Transfer fish to a cutting board and coarsely chop.
- Grill tortillas, turning once, 30 seconds per side. Divide fish, slaw and avocado among tortillas, then top with sour cream mixture. Garnish with lime juice and extra cilantro, if desired.

Steps:
- Make fruit salsa first.
- In a large bowl, mix the jalapeno jelly, lime juice, and oil. Chop, dice, mince all fresh fruit, onion, jalapeno, and cilantro and put into the same large bowl. Stir gently and refrigerate until ready to eat.
- Next make sauce:
- Place all ingredients into a medium bowl and stir to blend. Place in refrigerator to chill.
- Both fruit salsa and sauce can be made ahead.
- Place fish on large platter and drizzle with lemon or lime juice. Sprinkle with taco seasoning.
- Place flour tortillas in foil and warm in the oven at 350 deg. for 10 minute.
- Either on the stove top or BBQ, cook the fish until it flakes.
- Fill tortillas with chunks of fish, cabbage, toppings, sauce and top with fruit salsa.
- Enjoy and eat quickly.
