JAMILAH'S BASIC DOUGH RECIPE

I had to post this dough recipe separate because it's now my favorite dough. Use for all your pies and pizza's.

Steps:

  • Dissolve the sugar in the ¼ cup water. Sprinkle the yeast over the water and let ferment and bubble.
  • In a large bowl combine the yeast, flour, salt, olive oil, egg, and warm milk. Knead until a soft dough is formed. Dough will be slightly sticky, so always make sure your hands have a little olive oil on them.
  • Lightly grease the same bowl with olive oil. Return the dough to the bowl, cover with a clean cloth and leave in a warm dry place for at least 2 hours, until doubled.

Steps:

  • In a large, deep heavy pot or an electric fryer heat the oil to 375 degrees.
  • In a large bowl, beat together the egg and sugar. Stir in the milk and the shortening. Sift together all of the dry ingredients. Stir the dry ingredients into the egg mixture and stir to combine. Chill the dough for 30 minutes. On a lightly floured surface, flatten the dough to 1/2 inch thickness with your fingertips or a rolling pin. Cut out the doughnuts using a doughnut cutter or two sizes of round cookie cutters. Transfer doughnuts to wax paper and allow to dry for 10 minutes. Using a spatula dipped in the hot oil, carefully transfer the doughnuts to the hot oil. Cook 2 - 3 doughnuts at a time, flipping them when they brown on a side. Remove to paper towels to drain. Dust with confectioners' sugar or cinnamon sugar mixture. Serve warm.
  • Doughnut holes: Add dough to hot oil by the spoonful and fry until golden.
  • Variations: Chocolate doughnuts: Combine the melted shortening with 1 ounce of melted chocolate before adding to batter.
  • Glazed doughnuts: Combine 1/2 cup confectioner's sugar with 2 teaspoons hot milk and 1/2 teaspoon vanilla. Drizzle over cooled doughnuts.
  • Jelly doughnuts: Stir 1/2 cup jelly of choice until smooth. Transfer jelly to a plastic baggie and snip off one corner to squeeze out jelly. Poke doughnut round with a chopstick And squirt in jelly.

Steps:

  • Dough:.
  • Dissolve the sugar in the ¼ cup water. Sprinkle the yeast over the water and let ferment and bubble.
  • In a large bowl combine the yeast, flour, salt, olive oil, egg, and warm milk. Knead until a soft dough is formed. Dough will be slightly sticky, so always make sure your hands have a little olive oil on them.
  • Lightly grease the same bowl with olive oil. Return the dough to the bowl, cover with a clean cloth and leave in a warm dry place for at least 2 hours, until doubled.
  • Meat Filling :.
  • Heat the olive oil in a heavy large skillet over medium high heat. Add the ground lamb or beef and stir and cook until the meat is crumbly and it is no longer pink.
  • Stir in the chopped onion and cook, stirring until the onion is soft , about 5 minutes.
  • Stir in the pine nuts and all of the spices and seasonings. Stir and cook for one minute. Add the chopped tomatoes.
  • Cover the skillet , reduce the heat to low and cook for 10-15 minutes until the tomato is soft.
  • Remove from heat. Stir in the fresh lemon juice.
  • The mixture should not be watery but it should be moist. Set aside to cool.
  • Assembly:.
  • Take fist-fulls of the dough and on a floured surface roll out into small balls. Let rest for 5 minutes. Flatten each dough ball into 4" disc, about ½" thick.
  • Place on a lightly oiled baking sheet and top with meat. Repeat with remaining dough and meat.
  • Bake until golden brown, about 18-20 minutes. Serve warm.
  • Best way to eat: Serve hot out of the oven or warm with fresh lemon or plain yogurt.

Steps:

  • Preheat oven to 375 degrees.
  • In a mixing bowl whisk the eggs, milk and yeast together. Let the mixture sit for 15 minutes under refrigeration.
  • Using a pastry blender, blend the flour, salt, sugar, and cardamom together. Work the yeast mixture into the flour. Knead the dough until smooth, about 2 minutes.
  • Form the dough into a ball and allow to rest, about 20 minutes in the refrigerator.
  • Beat 1 1/2 cups butter until smooth.
  • Turn the dough out onto a floured surface and roll into an oblong about 3/8 inches thick.
  • Dot 1/3 of the butter over 2/3 of the dough. Fold the undotted dough over the remaining third of the butter-dotted portion. The dough is now in 3 layers.
  • Roll the dough out gently into an oblong, 3/8-inch thick. Repeat the folding process two more times.
  • Cover and chill the dough for 2 hours. Roll the dough into the desired shapes. Following the rolling techniques.

Steps:

  • Sieve flour, semolina flour, and salt onto a clean surface.
  • Make a well in the middle.
  • Mix oil, sugar, yeast and lukewarm water; leave for a few minutes to activate the yeast.
  • Pour oil/water mixture into the well of the flour mixture.
  • Slowly incorporate with a fork untill most of it is mixed.
  • Get your floured hands in there and knead until a smooth springy dough is achieved.
  • Place dough in a floured bowl; sprinkle with flour.
  • Cover with a wet tea towel and leave in a warm spot for an hour or until doubled in size.
  • Punch down and divide into 6 to 8 pieces. You can freeze at this point if you want to.
  • Roll out about 3mm thick.
  • Place on an olive oiled, and floured, sheet of tin foil.
  • Stack them up for 15 minutes to rest before adding toppings and cooking.
  • Preheat oven to its hottest setting.
  • Place baking trays inside.
  • When the dough is rested, remove hot tray from oven.
  • Place dough, without the foil, in the oven.
  • Bake for 8 to 10 minutes.
  • Yummy.

Steps:

  • Mix flour and semolina in a deep pot.
  • Add butter (hot) and mix it well together.
  • Place yeast in a warm water with sugar till dissolve .Add the yeast mixture to the flour mixture.
  • Add the water and mix it well until you got firm dough, leave to rest for 10 minutes, roll out and cut into a small finger's shape. Press on each finger on a grater to take the curved shape with the groves of the grater.
  • Fry in a hot oil.
  • Remove from fryer and place on a kitchen towel, dip in the syrup. Remove to get rid of excess syrup and serve.

Steps:

  • Combine the water and yeast in a mixing bowl, and stir until the yeast dissolves. Stir in a cup of the flour; then, stir in a second cup and the salt. Sprinkle some of the remaining flour over a work surface and your hands. Scrape the dough out of the bowl and onto the work surface. Gradually knead in additional flour, until the dough no longer feels sticky.
  • Lightly oil a large bowl. Shape the dough into a ball, and rotate it in the bowl to coat it with oil. Cover the bowl tightly with plastic wrap, and set in a warm, draft-free place until doubled in bulk, about 1 hour. Punch the dough down and knead it for about 1 minute. Return the dough to the bowl and let rise until doubled again, about 45 minutes. Punch down the dough.
  • Preheat oven to 425 degrees. On a lightly floured surface, roll the dough into a 12-inch circle if making pizza or a 10-inch circle if making focaccia. Stop and let the dough rest for a few minutes when it becomes too elastic to roll. Sprinkle a large baking sheet with cornmeal and slide the dough onto it. Top the dough as desired, and bake until the crust is golden brown, about 20 minutes. Cut into wedges, and serve hot.
