Steps:
- Heat oven to 375*.
- Combine flour, oats, sugar, baking powder and cinnamon.
- Beat in butter just until moistened.
- Set aside 2 cups.
- Pat the rest into a greased 13x9 pan.
- Bake for 15 minutes.
- Toss apples with the 2 T flour.
- Stir in preserves.
- Spread over hot crust almost to edges.
- Mix nuts and the 2 cups oat mixture.
- Sprinkle over the apples.
- Bake for another 30 minutes.

BLUEBERRY OATMEAL STREUSEL BARS

Steps:
- Preheat oven to 350°F.
- CRUST: Cream together the margarine and brown sugar, then slowly mix in the flour. Press the dough into a 13x9-inch greased baking pan, patting the dough evenly across the bottom and up the sides of the pan. Bake the crust for 15 minutes. Let cool.
- FILLING: Mix together the pie filling and lemon zest. Set aside.
- TOPPING: Cream together the margarine and the brown sugar. Slowly add in the flour, oats and cinnamon until the mixture is uniform with a crumbly consistency.
- Spread the blueberry mixture over the baked crust.
- Sprinkle the Streusel mixture over the blueberry mixture.
- Bake at 350F for 30 minutes or until topping is crunchy and golden brown. Cool for 15 minutes. Cut into 24 Bars.
RASPBERRY STREUSEL BARS
Steps:
- Preheat oven to 350 degrees.
- Process all ingredients in food processor until they begin to hold together. Pour into a half sheet pan and press evenly into bottom of pan. Bake until golden brown (about 20 to 25 minutes). Take out and cool for at least 15 mi

STRAWBERRY STREUSEL BARS
This lovely festive bar is so tasty. This bar is topped with a little powdered sugar glaze. It is such a pretty color and just right for any holiday dessert table.

Steps:
- Preheat oven to 350°F.
- In the bowl of a standing mixer beat the sugar and margarine until smooth and creamy.
- Beat in the tofu and mix again until well mixed.
- Add the flour and beat into the sugar mixture. If your mixer can't handle the job, just mix the rest of the flour until combined.
- Stir in the pecans.
- Reserve 1 cup of the pecan mixture.
- Press the rest of the pecan mixture into a 9x9x2-inch baking dish.
- Spread the strawberry preserves on top of the pecan mixture leaving a one half inch border with no filling from the edge of the baking pan.
- Put your reserved pecan mixture on top of the strawberry preserves and press lightly.
- Bake 45 minutes.
- Once done remove from the oven and cool completely on a wire rack.
- Top with powdered sugar or powdered sugar glaze.
- If you choose the glaze stir the milk and vanilla into the powdered sugar and beat until creamy. If this isn't liquid enough add more milk until it is at the consistency you like.
- With a spoon, drizzle the glaze over the cooled bars.

SNICKERDOODLE BARS

- Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking pan with nonstick spray and line with parchment, leaving a 2-inch overhang on the long sides for lifting out the finished bars.
- In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a handheld mixer), cream the butter with 1 cup of the granulated sugar and all of the brown sugar until light and fluffy, 4 to 5 minutes.
- Scrape the bowl well with a rubber spatula, then add the eggs one at a time and mix on medium speed after each addition until well combined. Beat in the vanilla.
- Add the flour, baking powder and salt and pulse until they start to combine, then scrape the bowl well and mix on low speed until the dough is uniformly combined.
- Scoop the dough into the prepared pan and press into an even layer. Stir the remaining 1/4 cup granulated sugar with the cinnamon in a small bowl. Sprinkle the cinnamon sugar evenly over the bars.
- Bake until the edges are golden and the center is set, 25 to 30 minutes.
- Let cool completely in the pan, then run a small spatula around the edge. Use the parchment overhang to carefully lift the bars out of the pan. Cut into 16 equal bars.

- In a large bowl, combine 2 cups flour, sugar and salt; cut in shortening until crumbly. In another bowl, whisk the egg, water and vinegar. stir into flour mixture with a fork until a soft ball forms. , On a lightly floured surface, roll out dough into a 15x10-in. rectangle. - Bring cranberries, sugar, and water to a boil in a saucepan over medium heat, stirring frequently. Reduce heat and simmer, stirring and mashing cranberries, until mixture is very thick, about 15 minutes. Cool completely, about 30 minutes.
- Preheat oven to 350 degrees F. Line bottom and sides of an 8-inch square baking pan with foil and spray with cooking spray.
- Pulse flour, rolled oats, pecans, brown sugar, baking powder, salt, cinnamon, and nutmeg in a food processor 3 times to mix. Add butter and pulse until mixture begins to clump. STRAWBERRY OATMEAL BREAKFAST BARS
I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
- Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
- Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
- Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
- Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
- Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.
- Bake in the preheated oven until the top is golden brown, about 45 minutes. Press the top down with a spatula to compress slightly. Let cool completely, about 1 hour. Cut into bars and serve.

I clipped this from a magazine years ago, and just now came across it again. I was introduced to the wonders of apricot in baked goods by my grandmother, who made an apricot-filled pastry every Christmas. Ever since, I have a weakness for apricot in my holiday cookies, and so I'm always looking for new recipes to add to my collection. Though I haven't tried this one yet, I just know it's a winner -- with a walnut crust and a tangy apricot filling, how could these bars be anything but scrumptious? :)

- Heat oven to 350 degrees F. Spray a 13x9-inch pan with cooking spray. In medium saucepan, combine apricots and water; simmer, uncovered, over medium-high heat for 25 minutes or until water is absorbed, stirring occasionally. Cool.
- While apricots are simmering, make the crust: Place 2 cups flour, walnuts, and and 3/4 cup powdered sugar in food processor; process until blended and nuts are finely chopped. Add butter; process until mixture resembles coarse crumbs (DO NOT process until mixture becomes smooth). Reserve 1 1/2 cups crumb mixture. Press remaining mixture in bottom of pan.
- Bake for 12 to 15 minutes, or until lightly browned around edges.
- While crust is baking, finish making the filling: Place cooked apricots in same food processor (you do NOT need to wash it first). Add eggs, lemon juice, sugar, 1/3 cup flour and salt; process until blended.
- Pour filling over crust. Sprinkle reserved 1 1/2 cups crumb mixture over the top. Return to oven; bake an additional 25 to 30 minutes, or until filling is set and top is light brown. Cool in pan on wire rack. Cut into bars, and sprinkle with powdered sugar.
