JANE'S BARBECUED SHORT RIBS
A recipe I got from an dear friend many, many years ago, who got it from her mother. Very easy, and wonderful flavor. Good in the summer and even better in the winter on a cold night. Can also cook it in the slow cooker. Then when you come home from work, all you have to do is either grill or broil them to brown them before serving. Serve with mashed potatoes or potato salad or egg noodles.

Steps:
- Place beef ribs in a large resealable plastic bag. Add onions, tomato sauce, water, vinegar, sugar, parsley, horseradish, mustard, salt, and black pepper. Squeeze excess air out of bag and seal. Marinate in refrigerator overnight or up to 24 hours, turning bag several times.
- Transfer beef and marinade to a large pot and bring to a boil. Reduce heat to medium-low, cover, and simmer until beef is tender and falling off the bones, about 2 hours. Remove beef from liquid with a slotted spoon.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Arrange beef on preheated grill and cook until browned on all sides, about 10 minutes.

CHILI CON CARNE WITH VEGETABLES
This recipe is adapted from Jane Brody's "Good Food Book". I have been making my version for years. I've tried others, but my family always asks me to go back to this one. It has TONS of flavor! This makes a large recipe, it can be cooked in a large crock pot after you brown the meat, onions and garlic.

Steps:
- In a large, deep, Dutch oven, saute the onion and garlic in the oil until softened.
- Add the meat, and brown, stirring to break up pieces. Drain any excess fat.
- Add the tomatoes and their liquid and all of the seasonings. Heat until bubbly, reduce the heat, cover and simmer about 30 minutes.
- Add the beans and vegetables, simmer covered about 20 minutes longer.
- *if it's not soupy enough, add 1 or more small cans of tomato juice.
- *Can put it in a large crock pot after the meat is browned. Cook as long as you need it to, I've cooked it on low for 8 hours, the carrots were a little soft, but fine. You could probably cook it on High for 2 hours or so and it would be fine as well.
- *I have used venison in this recipe with good results.

- In a skillet, heat oil and saute the onion and garlic until they are softened.
- Add the meat and brown.
- Add the can of tomatoes and all the seasonings. Heat until the mixture is bubbly, reduce the heat and cover. Simmer for about 30 minutes.
- Add the jalapeno peppers, green peppers, carrots and celery. Simmer for about 20 minutes longer or until the carrots are softened.

JANE'S BEST CROCK POT CHILI
This chili is the best I've ever had. My husband will eat it for 3 meals in a row (with the leftovers).

Steps:
- Ground the beef in a pan until cooked through. Drain and add to the crock pot.
- Add the pinto beans, kidney beans, beef broth and diced tomatoes to the crock pot.
- Dice the onion, green pepper, jalapeno.
- Heat a pan with the olive oil and add the onion, green pepper and jalapeno until the onion started to caramelize/brown.
- Add the chili powder, oregano and cumin. Mix. Next add the tomato paste and mix. Add to the crock pot.
- Cook for 4 hours on high, 6-7 hours on low.

Steps:
- Heat oil in a Dutch oven; add in garlic; cook until soft.
- Add in lamb; cook until browned; drain off excess fat.
- In a food processor or blender, puree the tomatillos; add to the pot along with cumin, jalapeno powder, chili powder, cilantro, sugar, salt, lemon juice, parsley, and 2 cups water.
- Bring to a boil; cook at a slow boil for 30 minutes, partially covered.
- Add in beans; cook 10 minutes; add masa harina mixture; cook 7 minutes; remove from heat.
- This chili is on the soupy side even when bound with the masa harina.
- It is best served in soup bowls and topped with crusty cubes of garlic bread that can be used to sop up the good juices.

VEGETABLE CHILI CON CARNE
Adapted from Jane Brody's Good Food Book - I added some smoked paprika and chipotle chili powder and removed the cloves and allspice. Sometimes I add cocoa powder. The seasoning mix is the key to this chili's flavor, it's deep and rich without being super spicy. If you want it more spicy, use more chipotle chili powder and less regular chili powder, you can also add a jalapeno pepper when you saute the vegetables.

- Preheat broiler. Line a large rimmed baking sheet with aluminum foil. Place chiles on the prepared baking sheet. Set 6 to 8 inches under the broiler. Broil until the chiles begin to blacken, approximately 15 to 18 minutes. Turn and broil another 5 to 8 minutes. Remove from the oven and cover securely with aluminum foil or another rimmed sheet pan.

- Add all the ingredients except the cream cheese to a 4 quart or larger slow cooker. Give everything a big stir. Cook on low for 6-7 hours or on high for 3 hours.
- Remove the chicken and chop into bite-sized pieces or use two forks to shred it. Return chicken to the slow cooker and add the cream cheese. Stir everything together until the cream cheese has melted. Taste, then add more salt or seasonings if desired. I usually add a little more chili powder and dried oregano/Italian seasoning blend.
