Steps:
- Place carrots in a large, heavy pot, then layer mushrooms, corn, Savoy cabbage, butternut squash, tomatoes, and water on top. Cover and bring to a boil over medium-high heat.
- While the soup is coming to a boil, heat a large skillet over medium-high heat and stir in the ground beef and taco seasoning. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add beef to the soup, and reduce heat to medium. Continue simmering until the carrots are tender, about 1 hour.

CHEF DEE'S HAMBURGER SOUP
The ultimate comfort food, this tasty soup has a hearty combination of vegetables and seasonings in a beef and tomato broth. After searching thru a multitude of soup recipes, I combined what the ingredients of several and this is the result. It's a keeper, according to my family.

- Brown the hamburger and onion in a large stock pot.
- Add the remaining ingredients,and bring to a boil. Add more water if necessary.
- Simmer for 1-2 hours, or place in crockpot for 5-8 hours on low.

BEST EVER HAMBURGER SOUP
Don't be fooled by the title of this soup. It has wonderful flavor and is so hearty that it can be used as the main course along with some homemade bread. It is delicious. I make it a lot in the winter months when we have a lot of snow--it warms you up. You may use rice in place of the barley, or a little of both.

- Brown hamburg in large pan breaking up into medium pieces.
- Drain off excess fat.
- Add the rest of the ingredients.
- Bring to a boil; reduce heat and simmer covered for 1 hour or till veggies are tender.
- If you have any leftover rice, peas, or corn, add them at the end and heat well.
- This soup freezes well as long as there is no potato in it.

Steps:
- Brown chicken in a saucepan. Add onion and garlic and continue browning until chicken is cooked through.
- Stir in the celery, red pepper, mustard and horseradish. Season with salt and saute a few minutes.
- Add stock, mushrooms and carrots. Bring to a boil & simmer for 30 minutes. Add the basil & parsley and simmer 10 minutes more.
- Serve garnished with parmesan cheese.

OLD-FASHIONED VEGETABLE BEEF SOUP
Better than Campbell's but just as comforting! Loosely based on a gourmet cooking magazine's recipe for Beef Barley soup, I didn't have any barley or okra, so I added root veggies to make it more hearty, like a rich broth with the chunkyness of stew. It turned out to be the best soup I've ever made! DH, stepson and baby girl kept coming back for more.

Steps:
- Cut meat into small, bite-size (1/2") pieces.
- In a large pot or dutch oven, saute meat in 1 T oil on medium-high heat until all sides are brown.
- Set aside on a plate.
- Chop celery, onion, potatoes, and carrots into bite-size pieces.
- Saute celery and onion in remaining 1 T oil until onion is golden (about 10 minutes).
- Add browned beef, water, broth, tomatoes with juices, carrots, potatoes, corn, bay leaves and garlic.
- Bring to a boil.
- Reduce heat and simmer uncovered until beef is almost tender, about an hour.
- Add peas and hot sauce to soup.
- Cover and simmer until beef is tender, about 30 minutes longer.
- Serve and season with freshly ground black pepper, hot sauce, or crumbled saltines, if desired.

I got this recipe from Penzey's Spices. It is hearty and so flavorful. A great way to use up leftover vegetables from the week. (4/S is a seasoned salt that Penzey's sells. You can substitute any seasoned salt).

- In a large Dutch oven, brown the ground beef.
- Add the onion and cook for 5 minutes.
- Add the water and stir in the celery, potatoes, carrots, salt, 4/S, pepper, basil, bay leaf, and thyme.

CANADIAN HAMBURGER SOUP
This is my favourite recipe from the original Best of Bridge cookbook. I thought it was already posted here at Zaar, but since I can't find it I want to make sure it's included; I've only modified it slightly from the original. It's so easy to make and tastes so great!

- In a large dutch oven, brown meat, adding onions and garlic. When meat has lost its pink colour, drain off any excess fat if there is any visible.
- Add all remaining ingredients, turn heat down to low so soup is barely simmering, cover, and let cook for about 2 hours (even longer is fine). After one hour, taste soup and add salt if necessary.
- If you have leftovers (soup freezes well, so consider making the whole pot even if it's a lot for your family), be aware that it tends to thicken when cool. When reheating, I always add a little more beef broth.

HAMBURGER SOUP
A delicious conglomerate of beef and vegetables in a rich tomato soup. I made this regularly when my kids were growing up. We ate a lot of ground beef because it was economical. This was an invention of mine while looking for another way to cook hamburger. I served it with cornbread or crackers. It was great!

- Pour into a very large pot.

BESTEST HAMBURGER SOUP
I think this is our #1 all time family favorite and it's often requested for birthday dinners. It's the 'Bestest' because my daughter described it as such when she was little. This freezes well and I've added directions for that and for reheating.

- In a large saucepan, brown meat, drain excess fat.
- Add salt, pepper, oregano, basil, seasoned salt, and onion soup mix.
- Stir in boiling water, tomato sauce, and soy sauce.
- Cover and simmer for about 15 minutes.
- Meanwhile, prepare celery, celery leaves, and carrots; Then add to simmering mixture with split peas and continue to cook for 30 minutes.
- Add macaroni and simmer for 30 minutes longer, adding more water if necessary and stirring occasionally.
- Serve sprinkled with Parmesan cheese over individual servings.
- To freeze: place soup in a rigid container and freeze. To reheat: remove from freezer and thaw. Place soup in saucepan and heat, stirring, until hot.
