JIM'S BURGERS

This was a specialty of my Grandfather's. I've loved them my whole life, and now my husband and son love them, too. For extra kick, use Pepper Jack instead of plain Monterey Jack cheese. Prep and cooking times are estimates, since I don't time myself and cooking time depends on desired doneness. Time doesn't include heating grill.

Steps:

  • If necessary, start coals heating (if using), start grill, or preheat broiler.
  • Spritz bread slices with olive oil on each side.
  • Shape beef into oblong patties to fit the bread slices. Season with salt and pepper to taste.
  • Grill or broil patties until cooked to taste, about 12-15 minutes for medium well (depending on heat source).
  • Meanwhile, broil or toast bread slices, turning once, until golden on both sides.
  • Top patties with cheese slices and grill or broil a few seconds longer, until cheese barely starts to melt.
  • Place patties on toasted bread, top with chili strips, and serve.
  • Enjoy!

1 lb extra lean ground beef (I use 88% lean for this recipe)
salt & pepper
4 slices monterey jack cheese, cut to fit bread slices
1 (7 ounce) can whole mild green chilies, drained and cut into wide strips

Steps:

  • Brush ribs with soy sauce. Combine oregano, onion powder and garlic powder; rub over both sides of ribs. Transfer to a large shallow roasting pan; refrigerate, covered, overnight., Preheat oven to 225°. Add lemon-lime soda and, if desired, juice to roasting pan (do not pour over ribs). Bake, covered, until tender, about 3 hours., Meanwhile, make barbecue sauce by dissolving sugar in hot water; combine with remaining ingredients, thinning with additional lemon-lime soda or juice if necessary. Reserve 1 cup for serving., Remove ribs from oven; discard juices. Brush both sides with barbecue sauce. Grill ribs, covered, on a greased grill rack over low direct heat, turning and brushing occasionally with remaining sauce, until heated through, about 10 minutes. Cut into serving-size pieces; serve with reserved sauce.

1/2 cup sugar or packed brown sugar
1/2 cup hot water
1 cup ketchup
1/4 cup honey mustard
1/4 cup barbecue sauce of choice
3 tablespoons lemon juice
1-1/2 teaspoons white vinegar

  • Divide ground chuck into 6 equal portions and gently from into 1/2 inch thick patties that are wider than the burger buns (as they will shrink). Use your thumb to press an indentation into the center of each patty. Cover and set aside.
  • Preheat grill to medium high heat. Just before cooking, sprinkle seasoning over the patties, then place on hot grill, indent-side up. Close grill lid and cook for 3-4 minutes, until the bottom of the burger is seared and juices are accumulating on top of the burger. Flip and cook an additional 3-4 minutes or until the beef reaches 160 degrees F.
  • Place cheese on burgers during the last minute of cooking. Remove to a plate and allow to rest for a few minutes before serving in a bun, with toppings.
