JUICY FRUIT PIE

This recipe comes from the Sep 2001 issue of LETSIVEONLINE.COM magazine, & is a winner in my book, especially when the fruits are fresh! Preparation time does not include the 4 hours for the pie to chill.

Juicy Fruit Pie image

Steps:

  • Combine fruit in a medium bowl, then transfer 2 cups of the fruit mixture to a smaller bowl & mash with a fork. Set aside.
  • In a medium saucepan, mix together the cornstarch & apple juice until cornstarch is completely dissolved.
  • Add mashed fruit & cook over medium heat about 7-10 minutes, until mixture is thickened.
  • Stir in lemon juice & remaining fruit.
  • Pour fruit mixture into pie crust & chill at least 4 hours, until set.
  • Serve with vanilla yogurt or frozen yogurt.

Steps:

  • Preheat oven to 400 degrees F.
  • For the crust: Place flour and sugar in bowl, cut in shortening. Add fruit juice. Mix until dough forms a ball. Add more juice if necessary. Divide ball into 2 pieces and roll out.
  • For the filling: Combine pineapple, oranges, cherry pie filling, cranberry sauce, sugar, tapioca, cinnamon and lemon juice. Line a 9-inch deep-dish pie plate with half of the rolled out pastry. Add filling, dot with margarine and top with other half of pastry. Make several slits in top crust. Bake 50 to 60 minutes or until crust is golden brown. Remove from oven. Mix together the powdered sugar and lemon and brush glaze on the pie.

5 tablespoons fruit juice, from pineapple or oranges in filling
1 (15-ounce) can pineapple tidbits, juice reserved

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, mix together cherries, cherry pie filling, currants, cranberries, gooseberries, apples, sugar, cinnamon, and almond extract. Allow to set 15 minutes.
  • Spoon equal amounts of fruit mixture into 3 pastry-lined 9 inch pie pans. Dot each pie with 1 tablespoon butter. Cover each pie with top pastry. Seal edges and cut steam vents in tops.
  • Bake in preheated oven for 45 to 50 minutes, until golden brown.

Steps:

  • For Pie Crust: Mix all pie crust ingredients with fork.
  • Press mixture into a 10 inch pie plate.
  • Bake crust at 450°F for 10-12 minutes. Watch carefully as not to burn crust.
  • Filling: Cook together until boiling the sugar, salt, cornstarch, water and corn syrup.
  • Remove from heat and add the half package of jello and mix well.
  • Let the mixture cool slightly and then add fresh fruit.
  • Pour into baked pie shell and refrigerate until well chilled.
  • Serve with whipped cream and enjoy!
