Steps:

  • Pour 1/2 cup of water into a bowl (preferably that of a stand mixer) and stir in the yeast and sugar. Let sit for 5 minutes, until foamy. Add the rest of the water and about half of the flour. Stir until well blended. Add the rest of the flour, the salt and butter and stir with the dough hook (or by hand) until well combined. Continue to knead (if using a dough hook, run it for about 8 minutes, poking dough down once in awhile) until it's smooth and elastic. If you used the dough hook, turn the dough out onto the countertop and knead a few times by hand to make sure it's evenly smooth. Shape the dough into a ball and put it back into the bowl. Cover with a tea towel and let it sit for 1 to 1 1/2 hours, until it's doubled in size. Butter two 4-x8-inch loaf pans. Punch the dough down and pat each piece into a rectangle that's about 9-x12-inch - or a bit bigger than a standard piece of paper. Starting at a short end, fold it in thirds, like a letter. Place seam side down in the loaf pans, tucking the ends in. Cover with the tea towel again and leave them for an hour, until they puff right up out of the pan. Preheat the oven to 375°F and put the rack in the middle of the oven. Bake for 30-35 minutes, until the loaves are honey brown. Immediately turn the loaves out of their pans and onto a rack to cool.

Steps:

  • Pour 1/2 cup of the water into a bowl and mix with yeast and sugar til foamy.
  • Let sit for 5 minutes until creamy.
  • Put the yeast mixture, rest of the water and 3 1/2 cups of the flour into the mixer with the dough hook.
  • Mix slowly until blended then add the rest of the flour.
  • Increase speed and scrape down the sides til the dough comes together.
  • (If it doesn't add a tbsp of flour at a time til it does.) Add salt and mix at medium speed for 10 minutes (or do half in mixer and half kneading) til dough is smooth and elastic.
  • Back in mixer add butter 1 tbsp at a time (dough may come apart, but mixing will pull it back together).
  • Turn dough out on lightly floured surface and shape it into a ball then place in a large buttered or oiled bowl.
  • Turn dough so it is completely coated in the fat, then cover in plastic for 45 minutes to an hour, til it has doubled in size at room temperature.
  • Butter 2 loaf pans.
  • Deflate the dough, cut in half and turn out onto a lightly floured surface.
  • Roll out into a 9 x 12-inch rectangle.
  • With the short end facing you, fold the dough into thirds like a sheet of paper to go into an envelope, creating a roll.
  • Pinch the seam closed, and pinch the ends enough so it will fit in the loaf pan.
  • Drop in the loaf pan seam side down, and repeat.
  • Cover the loaves with buttered plastic wrap and allow to rise again in a warm place (80°F) for 45 minutes, until they double in size.
  • Preheat the oven to 375°F and put the rack in the center of the oven.
  • Bake for 35-45 minutes til they are honey brown.
  • Immediately turn out of pans onto a rack to cool.
  • Once almost completely cool, they can be cut.
  • Store in a brown paper bag for a day or two.
  • Once cut, turn cut side down onto a cutting board and cover with a kitchen towel.

TUNA-SALAD SANDWICH, JULIA CHILD STYLE

This was one of Julia Child's favorite dishes for a working lunch. For decades, Julia was on the road more than she was home and, when she returned to her beloved kitchen, she craved simple foods. For Julia, the important ingredients for this sandwich were the tuna (it had to be packed in oil) and the mayo (she preferred Hellmann's). Her longtime assistant, Stephanie Hersh, said, "The rest was up for grabs." Make it with capers, cornichons and chopped onion, a squirt of lemon juice and some herbs, serve it open-face on an English muffin or between slices of white bread, and you'll have Julia's midday signature.

Tuna-Salad Sandwich, Julia Child Style image

Steps:

  • Prepare the tuna salad: Using a fork, mash the tuna with 3 tablespoons mayonnaise. Add the celery, as much onion and chopped cornichons as you'd like, and the capers or olives, and toss to combine. Add a squirt of lemon juice, some salt (go easy at first) and pepper. Taste and see if you'd like more mayo, onion or cornichons. Add more lemon juice, salt and pepper to taste. Stir in the chives or parsley, if you're using either. (Makes 1 1/2 cups.) The tuna salad is good to go as soon as it's made, but it's even better after a couple of hours in the fridge.
  • When you're ready to serve, spread the muffins or bread with a little mayonnaise. If you're using English muffins, do what Julia did: Make open-face sandwiches. Put a leaf of lettuce on each muffin half, top with tuna salad and finish with tomato and onion. If you're using sliced bread, prepare traditional sandwiches: Top each of 2 slices of bread with 1 piece lettuce, tomato and onion, then spread over the tuna and finish with remaining onion, tomato, lettuce and bread.

1 (5-ounce) can tuna packed in oil, drained
3 to 4 tablespoons mayonnaise, preferably Hellmann's, plus more for spreading
3 tablespoons finely chopped celery
2 to 3 tablespoons finely chopped onion, preferably Vidalia
3 to 4 cornichons, finely chopped
1 tablespoon capers, rinsed, patted dry and chopped if large, or 5 olives, pitted and chopped
Fresh lemon juice
Salt
Freshly ground pepper, preferably white
1 to 2 tablespoons minced fresh chives or parsley (optional)
2 toasted English muffins (preferably Bays) or 4 untoasted white bread slices
4 soft lettuce leaves, such as Boston
4 tomato slices
4 thin slices onion (optional)

  • Remove the container from the bread machine. Pour 1/2 cup of the milk into a small saucepan and add the butter. Swirl the pan over moderate heat only until the butter has almost melted.
  • Remove the dough from the container and give it a vigorous 1 minute of kneading on a lightly floured work surface. You should have a smooth, supple dough.
  • Transfer the risen dough to your lightly floured work surface. With lightly floured hands, firmly press and pat the dough into a 10-inch rectangle with the ends to your left and right.
  • Drape a lightly floured towel over the pan. Let the dough rise at 72° to 75° until the pan is four-fifths filled; this should take no more than an hour.
  • Lay the aluminum foil, buttered side down, over the pan and place the baking sheet on top. Set the pan in the oven and center the weight on the baking sheet.
  • To test, rapidly remove the pan and close the oven door. Turn the loaf out onto your work surface. It should easily come out of the pan and be lightly browned all over.
  • Set the loaf on a rack on its side and let cool thoroughly, about 2 hours. Bag it in plastic. Its flavor and texture will improve after 24 hours, and if you plan to slice it very thin, give it a 2-day wait.
  • You can, of course, make this bread entirely by hand, or you can use a heavy-duty mixer to mix and knead the dough. If you are doing it by hand, let the dough double in bulk at both the first and second risings.
  • For a traditional humped loaf of white bread, let the dough fill the pan completely during the final rise. Bake the bread uncovered in the preheated 425° oven for about 20 minutes, or until puffed and brown.
  • This recipe also makes delicious raisin bread, and Julia Child particularly likes it baked in a closed pan. Follow the same procedure, but knead 1 1/2 cups of currants into the dough by hand, following the first rise.
