JULIAN'S FESTIVE TUNA SALAD

This is my friend Julian's recipe for Tuna Salad. It is a spicier and heartier alternative to the mundane, mayonnaise-saturated Tuna Salad that most have grown accustomed to.

Steps:

  • In a mixing bowl, combine tuna, red onion, orange bell pepper, red bell pepper, black beans, canned chile peppers; mix in mayonnaise if desired. Season with cumin and salt and pepper; mix in cilantro, and salsa verde if desired.

4 (5 ounce) cans tuna, packed in olive oil
1 red onion, diced
1 orange bell pepper, diced
1 red bell pepper, diced
1 (15 ounce) can black beans, drained
1 (4 ounce) can green chile peppers, chopped
¼ cup mayonnaise
2 teaspoons ground cumin
salt and pepper to taste
¼ cup chopped fresh cilantro
1 tablespoon spicy salsa verde to taste

FESTIVE TUNA SALAD

You could serve this as a 1st course for company; it is not your usual mayo/tuna salad. The addition of fresh mushrooms and green peas really does the trick. I usually make a lighter version where I will strain the whey out of some plain yoghurt in a sieve and use 1/3 strained yoghurt and 2/3 mayo. If using this method the yogurt must be drained really well. I add the peas when they are still frozen; they thaw quickly and I like them cold in the salad and they do not get mushy

Festive Tuna Salad image

Steps:

  • Flake the tuna with a fork; add mayo, (yoghurt if using lighter version), lemon juice. Mix well. Add salt and pepper to taste.
  • Fold in mushrooms and peas; if you add the peas frozen they will thaw quite quickly.
  • If using toast bread - toast bread and add a generous scoop of tuna salad on top; garnish with tomatoes and fresh herbs.
  • If using baquette - add tuna salad to plate and garnish with tomates and fresh herbs, serving bread on the side.

6 ounces tuna in water
1/2 cup mayonnaise (or low-fat mayonnaise, or mix of mayo & yoghurt as noted in desciption)
2 tablespoons lemon juice
salt & pepper
5 ounces fresh mushrooms, diced small (125 g)
1/2 cup green peas (125 g)
4 slices white bread (I served on the side with French Baguette)
2 tomatoes
3 tablespoons fresh dill (optional) or 3 tablespoons parsley (optional)

  • Take the tuna and squeeze it over the sink handful by handful until the water is pretty much all out of it.
  • Mix all the remaining ingredients together and refrigerate.

Steps:

  • 1. Prepare the tuna: In a shallow bowl, combine the olive oil, lemon juice, salt, and pepper. Add the tuna, coat well and let rest for 15 minutes, turning once.
  • 2. Prepare the salsa: In a separate bowl, combine all the remaining ingredients except the chopped cilantro. Refrigerate, covered, for up to 1 hour.
  • 3. Shortly before serving, sear the tuna in a nonstick skillet over medium heat for 4 to 5 minutes on the first side, adding any remaining marinade or extra oil, if necessary. Turn the fish and sear for 3 minutes on the second side, for medium-rare. With a spatula, remove the tuna steaks to the center of 4 dinner plates.
  • 4. Divide the salsa (with the juices) equally atop the tuna. Garnish with chopped cilantro.

4 tuna steaks (each 6 to 8 ounces), cut 1 inch thick
For the salsa:
1/2 cup diced (1/4 inch) peeled hothouse cucumber

3 scallions (3 inches of green left on), very thinly sliced
3 tablespoons fresh lime juice
1 1/2 to 2 teaspoons very finely diced red jalapeño or other chili, seeds and ribs removed
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh cilantro leaves, for garnish

TUNA-SALAD SANDWICH, JULIA CHILD STYLE

This was one of Julia Child's favorite dishes for a working lunch. For decades, Julia was on the road more than she was home and, when she returned to her beloved kitchen, she craved simple foods. For Julia, the important ingredients for this sandwich were the tuna (it had to be packed in oil) and the mayo (she preferred Hellmann's). Her longtime assistant, Stephanie Hersh, said, "The rest was up for grabs." Make it with capers, cornichons and chopped onion, a squirt of lemon juice and some herbs, serve it open-face on an English muffin or between slices of white bread, and you'll have Julia's midday signature.

Tuna-Salad Sandwich, Julia Child Style image

Steps:

  • Prepare the tuna salad: Using a fork, mash the tuna with 3 tablespoons mayonnaise. Add the celery, as much onion and chopped cornichons as you'd like, and the capers or olives, and toss to combine. Add a squirt of lemon juice, some salt (go easy at first) and pepper. Taste and see if you'd like more mayo, onion or cornichons. Add more lemon juice, salt and pepper to taste. Stir in the chives or parsley, if you're using either. (Makes 1 1/2 cups.) The tuna salad is good to go as soon as it's made, but it's even better after a couple of hours in the fridge.
  • When you're ready to serve, spread the muffins or bread with a little mayonnaise. If you're using English muffins, do what Julia did: Make open-face sandwiches. Put a leaf of lettuce on each muffin half, top with tuna salad and finish with tomato and onion. If you're using sliced bread, prepare traditional sandwiches: Top each of 2 slices of bread with 1 piece lettuce, tomato and onion, then spread over the tuna and finish with remaining onion, tomato, lettuce and bread.
