CHOCOLATE WATER GLAZE
Found this recipe in 'The Perfect Cake' by Susan G. Purdy. I used it on RhondaJ's BEST EVER Banana Cake with Cream Cheese Frosting (#67256), instead of the cream cheese frosting. It pairs wonderfully with the banana cake. Very rich, and it offsets the sweetness of the cake. This glaze sets with a fine gloss and holds up well in hot weather. The consistency is rather fudge-like - creamy and smooth. You must whisk in enough water in the beginning (all at once) to prevent chocolate from seizing. Cakes coated with this glaze can be frozen. This recipe makes enough to glaze one 9-inch 2 or 3 layer cake.

Steps:
- Double Boiler Method: Melt chocolate in a pan set over hot (not boiling) water.
- Stir until smooth.
- Microwave Method: Melt chocolate in a microwave-safe bowl.
- Microwave at LOW or MED for 30 sec.
- Remove and stir.
- If not completely melted, continue microwaving.
- Stir until smooth.
- Once chocolate is completely melted and smooth, whisk in the hot water all at once (not slowly or the chocolate may seize) until the mixture is satiny smooth.
- It will have consistency of softly whipped cream.
- If you wish the glaze to be thinner, whisk in another TB (or more) of hot water.
- Glaze the cake- tilt it to help glaze flow and/or use a spatula to spread.
- Let the glaze set.
- If the weather is too warm, refrigerate the cake to let glaze set.
- The gloss disappears in hot weather but returns at room temperature.
- Beware of fingerprints on the glaze; they show.

CHOCOLATE GANACHE
Steps:
- Preheat oven to 350 degrees F. Butter 12 (4-ounce) ramekins. Melt chocolate and butter in double boiler, stirring gently. Add sugar. Remove from heat and keep warm.
- In a large bowl beat eggs and yolks until volume is doubled. Fold in flour gently until well incorporated. Fold 1/4 of warm chocolate mixture with egg mixture, to temper. Combine mixtures by folding gently. Fill ramekins 2/3 full. Bake for 4 to 6 minutes.
CHOCOLATE GANACHE
Steps:
- Cook the chocolate chips, heavy cream, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
HOT WATER CHOCOLATE CAKE AND GANACHE
Steps:
- For the cake: Preheat the oven to 350 degrees. Prepare 2 (10-inch) cake pans, greased and floured, bottom lined with waxed paper. Cut the shortening into the dry ingredients. In a large coffee mug, place 3 eggs. Fill the mug the rest of the way with milk and add to the dry mix in the bowl. Then add another 1/2 mug of milk. Add the vanilla, and boiling water. Mix for 2 minutes on medium speed. Scrape down sides of bowl. Pour into prepared pans. Bake at 350 degrees for 45 to 55 minutes or until a cake tester comes out clean. Remove from oven and let cool in pan for 15 minutes. Remove from pans, remove waxed paper and let cool completely.
- For the filling: In a double boiler melt the chocolate, remove from boiler and put aside. In the double boiler place the 3 egg whites and sugar and cook over medium heat until warm to the touch and sugar is dissolved. Place mixture in large mixing bowl and beat until cool. Add the melted chocolate. When cool, add the butter and vanilla. Mix until fluffy. Use the mixture as a filling and first layer of frosting on the cake. Place the cake with the buttercream in the freezer for 1/2 hour to firm up before covering with the ganache.
- For the ganache: In a saucepan mix and bring to a simmer the whipping cream and butter. Add in the chocolate chips and stir until smooth. Let sit until cool. Frost cake with the ganache.
CHOCOLATE GANACHE GLAZE

- Place the chopped chocolate in a bowl. Scald the cream. Pour the hot cream over the chocolate and gently stir to melt all the chocolate. This can be made up to 3 days before and reheated slightly for use. The glaze should drizzled over the puffs when its room temperature, or slightly warm, but still liquid. If the glaze is hot, it will drip too much.;
MOM'S CHOCOLATE WATER CAKE
My mom passed away in 1991 and my sisters and I have wished we had some of her recipes. We really missed her water cake, fried corn, augratin potatoes and a few others. The other day my sister came across this recipe and scanned it to send me a copy. This is so good and though you put them in order of cake mix on the bottom and topping on top, once it bakes the pudding is on the bottom and cake on top. It is DELISH! Gonna save it here where I know I can find it if I loose my copy. Enjoy

- Sift sugar, flour, salt, baking powder, cocoa, stir in milk, margarine and vanilla.

CHOCOLATE BUTTER GLAZE
From Baker's Dozen Cookbook. I used this to glaze Rich Chocolate Cake (under my recipe) and the glaze is unbelievably delicious with a shiny finish. Easy to prepare and it's perfect for a cake that does not require refrigeration (suitable for tropical weather such as Singapore). Serve frosted cake at room temperature. Use best quality chocolate for good results (i used Valrhona). The prep time is for the microwave method for preparing the glaze only (glazing cake not included). Yield is 1 1/2 cups which is perfect for a 9 inch cake.

- Combine chocolate, butter and corn syrup in a heatproof medium bowl.
- Place in a skillet of barely simmering water.
- Stir frequently, until almost completely melted.
- Remove bowl from skillet and stir until mixture is smooth.
- Do not whisk or beat the glaze.
- Let stand at room temperature without stirring until cooled, thick and spreadable (about 30mins, depending on kitchen temp).
- You may also use microwave for the melting step (as I did), just mix the ingredients in a microwave-safe bowl.
- Nuke the mixture at LOW power for approx 20 sec, remove bowl, stir gently.
- Repeat until chocolate has melted and mixture is smooth.
- The first layer of glaze- Spread a very thin layer using 1/4 of the glaze over the top and sides of cake (cake must be at room temp).
- Be sure to smooth rough surfaces and fill in any cracks.
- Be careful not to get any crumbs into the bowl of glaze.
- This is the'crumb coat', and it gives the cake a smooth and even undercoat for the final glaze.
- The final glaze- Rewarm the glaze in microwave/double boiler for a few seconds.
- Stir gently until smooth.
- Do not overheat; glaze should be 90F for it to dry to a shiny finish.
- If necessary, cool to proper temperature.
- Once the final glaze has been applied, let cake stand at room temp until the glaze sets, about 15mins.
- NOTE: Do no re-spread glaze once it has set, or it will have marks and dull streaks.

- Bring the cream to a near boil in a small saucepan. Remove the pan from the heat and stir in the vanilla or espresso powder. Immediately add the chocolate chips. Tilt the pan this way and that so the hot cream runs over them. Set the pan aside for 5 minutes, then stir the mixture briefly to start smoothing it out.
- Let the mixture rest for another 2 to 3 minutes, then whisk briefly, until smooth. The glaze will be a little runny at first, perfect for drizzling on pound cakes and Bundt-type cakes. If you want slightly thicker coverage, such as on a cheesecake or sheet cake, you can let the glaze cool slightly before spreading it. If the sauce cools and starts to thicken and you need to rewarm it to thin it out, heat it very gently in a saucepan. You can also reheat it in a microwavable container, but proceed carefully so you don't burn the chocolate-microwave for no more than 15 seconds at a time, stirring between each round.

- In a small microwave safe bowl.microwave the chocolate on 50% power for 1 minute. Stir well. If necessary, continue microwaving on 50% power, stirring at 30 second intervals. Stop microwaving before the chocolate completely melts and let the residual heat finish the job. (Alternatively, melt the chocolate in a double boiler over simmering water, stirring frequently. Immediately remove from the heat. Sift the powdered sugar, and cocoa powder together into a medium bowl. Combine the corn syrup and 1/3 cup water in a small saucepan. Heat to just boiling, stir well. Stir the syrup mixture into the powdered sugar mixture just until well blended and completely smooth. Stir in the melted chocolate and vanilla until completely smooth. Thin the glaze to a spreadable consistency with hot water, a few drops at a time until completely smooth. Set the glaze in a large bowl half full of hot tap water to help keep glaze warm while you work. Reheat it to warm in a saucepan or in a microwave over if it cools completely) If the glaze thickens upon standing, stir in a few more drops of hot water until thoroughly blended; be sure to blend in thoroughly, so the glaze maintains its luster. Using a table knife, spreader or small palette knife, cover the top of each cookie witha smaooth even layer of glaze. Let the cookies stand on wire racks until the glaze completely sets, at least 1 1/2 hours and preferably several hours. Store in a single layer or layered with wax paper in an airtight container.

In a heavy-bottomed medium saucepan (no larger than 2 quarts, or the mixture will reduce too rapidly and burn before it reaches the correct temperature) over high heat, bring the sugar, water, and chocolate to a boil over medium-high heat, stirring occasionally.
