CRUNCHY FRIED SHRIMP
The panko bread crumbs give these fried shrimp just the right amount of crunch.

- Beat eggs in a medium bowl until frothy. Mix flour, salt and pepper in another medium bowl. Dredge shrimp in flour, shake off excess. Dip shrimp into eggs, then press shrimp into Panko; turn shrimp over and press into Panko again to coat both sides.
- Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 350 degrees F. Working in batches, add shrimp to hot oil; deep-fry until cooked through, about 1 minute. Using tongs transfer shrimp to paper towels to drain. Arrange shrimp on platter. If desired, serve with Kikkoman Tonkatsu Sauce for dipping.

- Melt 6 tablespoons butter in a skillet over high heat. Add shrimp; cook and stir until browned, about 2 minutes. Reduce heat to medium-low. Season shrimp with 1 1/2 teaspoon lemon juice, garlic salt, salt, and pepper; cook for 1 minute. Serve with remaining 2 tablespoons butter and 1 1/2 teaspoon lemon juice.

JUMBO UN-FRIED SHRIMP
Steps:
- Preheat the oven to 450°F. Place a wire rack on a foil-lined baking sheet.
- Put the flour in a shallow dish. Put the panko in another shallow dish. In a large bowl, whip the egg whites with a whisk until they are very foamy but not quite holding peaks. Working in batches, dredge the shrimp in the flour, shaking off any excess. Add the shrimp to the egg whites and toss gently to completely coat them. Working with a few at a time, add the shrimp to the panko and coat completely.
- Lay the shrimp on the wire rack. Season them generously with salt and pepper, and spray them lightly with cooking spray.
- Bake until the breading is golden and crispy and the shrimp are cooked through, about 8 minutes. Serve with the tartar sauce.

- In a medium size mixing bowl combine shrimp, salt and pepper; stir.
- Heat oil in a medium size saucepan. In another medium size mixing bowl stir together eggs, flour and baking powder. Dredge shrimp in egg mixture then fry in oil until they are golden.

UNCLE BILL'S JUMBO DEEP FRIED PRAWNS (SHRIMP)
I started to develop a recipe for jumbo prawns in 1996 and finally succeeded in a very tasty recipe. These jumbo prawns are not difficult to prepare and will satisfy your desire for an enjoyable meal. I cooked these prawns (shrimp) for a Seafood Dinner for 12 couples in the year 2000, and their comment was that they had never tasted prawns that were so well prepared and tasted so good. Because of their size and cost, one does not want to spoil a tasty prawn. Chilling time for the prawns in the refrigerator is not included in the preparation time.

Steps:
- Peel off shell, devein prawns and rinse in cold water. Pat dry with paper towels.
- Cut slit in each prawn about 1/4 inch deep.
- In a mixing bowl, whisk together eggs and milk until frothy.
- In a plastic bag, add flour and pepper and shake well to blend.
- In a separate plastic bag, add Panko crumbs, dried dill weed, seasoning salt, garlic powder and Beau Monde seasoning, shake well to combine.
- Dip prepared prawns individually into the egg mixture to coat well.
- Drop each prawn into the flour mixture and shake to coat well.
- Dip the prawns again in the egg mixture, turn to coat well.
- Drop each prawn into the Panko crumb mixture and shake until well coated.
- Place coated prawns on a plate, cover with plastic wrap and refrigerate for about 2 hours to chill.
- In a medium size saucepan, or a deep frying pan, or a WOK, add oil and heat to 350°F.
- Carefully drop the prawns two at a time into the hot oil and deep fry for about 1 1/2 minutes, turn over and continue to fry for an additional 1 to 1 1/2 minutes, and the prawns are a light golden brown. (Do not overcook prawns.).
- Serve immediately with lemon wedges and tartar sauce or a sauce of your choice.

- Peel shrimp but leave the tails on. (Use a small paring knife to make a tiny cut just above the tail to make it easier to start peeling.) Remove the inner and outer black veins (really the digestive tract -- gross) by loosening them with the knife or the pointy tip of a metal skewer, then pulling them out in one piece with your fingers. Discard the veins. Rinse the shrimp in cold water and pat dry with paper towels.
- Wash your hands well and beat the eggs in a small bowl. Add salt and pepper. Place the bread crumbs in a dinner plate. Set up an assembly line from left to right with the shrimp, the eggs, the bread crumbs, and a sheet pan with sides.
- Grasping the tail of the shrimp, dip each one in the eggs, then dredge in the bread crumbs, patting the crumbs onto the shrimp. Line up the shrimp on the sheet pan, using wax paper to separate the layers of shrimp if you need to stack them.
- Wash your hands again and set a clean sheet pan or platter lined with paper towels near the stove, along with tongs (or a fork) and a slotted spoon.
