KANSAS CUCUMBER SALAD

Cucumbers are my very favorite garden vegetable, so I use this recipe often. I got it from a friend years ago. I've heard this refreshing dish keeps very well in the refrigerator, but it goes so fast around our house, I've never found out for myself. —Karen Ann Bland, Gove, Kansas

  • In a large bowl, combine Miracle Whip, sugar, vinegar, dill and, if desired, salt; mix well. Add cucumbers and onions; toss. Cover and chill for at least 1 hour.

  • In a large bowl, combine salad dressing (mayo), sugar, vinegar, dill, and salt. Mix well.
  • Peel and slice cucumbers thin.
  • Chop green onions, stalks and all.
  • Add to bowl and toss.
  • Cover and chill at least one hour before serving.

Warm Cucumber Salad image

Steps:

  • Peel the cucumber lengthwise, scoop out the seeds with a spoon and cut into pieces.
  • Put in a colander and sprinkle with a little salt, to draw out water.
  • Put some oil/butter in a medium hot pan cover the bottom with mustard seeds and wait for them to pop; meanwhile chop the onion finely and the parsley roughly.
  • Pour excess water off the cucumber pieces and put them in the pan; stir around just so they get warm--a couple of minutes.
  • Sprinkle with onion and parsley, give it a stir and serve.

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

Steps:

  • Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
  • Mix cucumbers, onions, and green bell pepper together in a bowl.
  • Whisk sugar, vinegar, celery seed, and 2 teaspoons salt together in a bowl until dressing is smooth; pour over cucumber mixture and stir until evenly coated.
