HUNGARIAN GOLDEN PULL-APART CAKE WITH WALNUTS AND APRICOT JAM (ARANYGALUSKA)

Aranygaluska, also called golden dumpling cake, butter puffs, and monkey bread, has been extolled by Jewish immigrants from Hungary for years.

Hungarian Golden Pull-Apart Cake with Walnuts and Apricot Jam (Aranygaluska) image

Steps:

  • Dissolve the yeast in the warm milk in the bowl of a standing mixer equipped with a paddle attachment. Add 1/4 cup of the sugar, the eggs, orange zest, vanilla, and 1 stick of butter. Gradually add the flour and salt, beating until mixed. Cover the bowl and leave for an hour, or until the dough has about doubled in size.
  • Preheat the oven to 350°F and butter a 10-inch round pan with some of the second stick of butter.
  • Melt what is left of the second stick of butter plus the remaining half stick and put it in a small bowl. In a separate bowl, mix the walnuts, brown sugar, remaining white sugar, cinnamon, and the cake or cookie crumbs.
  • Roll the dough into a 1/2-inch-thick circle. Using a 1-inch cookie or biscuit cutter, cut circles of dough. Dip the circles first in the butter, then in the nut mixture and set in the pan, almost touching each other. After a layer is completed, spoon on dollops of jam. Make a second layer, filling in the holes with dough, then jam, continuing and rerolling until the dough is used up, ending with the walnut topping but not the jam. Bake in the oven for 35 to 40 minutes, or until golden brown and set. Leave in the pan for a few minutes, then turn onto a plate and serve warm. You can either cut the cake or pull the sections apart. Serve for a sweet breakfast treat, or as a dessert, served with good vanilla or rum raisin ice cream.

1 cup (235 ml) warm milk
1/2 cup (100 grams) sugar, plus 2 tablespoons

1 teaspoon vanilla
1 cup plus 4 tablespoons (2 1/2 sticks/282 grams) unsalted butter, at room temperature, divided
4 1/2 cups (600 grams) unbleached all-purpose flour (about)

1 1/2 cups (180 grams) ground walnuts
6 tablespoons (83 grams) brown sugar
3/4 teaspoon cinnamon
3 tablespoons cake or butter cookie crumbs
3/4 cup (150 grams) apricot or plum jam

Steps:

  • Place cabbages in a large stockpot filled halfway with water; add vinegar. Cover and steam over low heat until leaves are tender, 1 to 1 1/2 hours. Remove cabbages, reserving vinegar cooking water. Rinse with cold water to chill the cabbage, then separate the leaves.
  • Meanwhile, bring 3 cups water and rice to a boil in a saucepan over high heat, then reduce heat to low, cover, and simmer until the rice is tender, about 20 minutes. Remove from heat and fluff with a fork; set aside to cool.
  • Heat a large skillet over medium heat. Brown the ground beef and sausage with the onion, salt, garlic salt, and pepper, 7 to 10 minutes. Drain and set aside to cool.
  • Preheat oven to 325 degrees F (165 degrees C). Cover the bottom of a large roasting pan with a single layer of cabbage leaves.
  • Prepare the filling by stirring together the rice, cooked meat, and sauerkraut until well blended. Place 1/3 cup of filling into each leaf and roll into a cylinder, tucking in the ends as you roll it up. Place the rolls into the roasting pan. Pour in enough of the cooking liquid from the cabbage to come halfway up the sides of the rolls. Cover pan with a tight fitting lid or aluminum foil.
  • Bake in preheated oven for 1 1/2 hours. Serve warm or at room temperature.

Galuska for Stew (Dumplings) image

Steps:

  • Mix eggs, flour, water, salt to form a smooth batter.
  • Boil a pot of water with the 4 teaspoons of salt.
  • Dip teaspoon in hot water; scoop a teaspoon of batter and put in water.
  • It should just slide of the spoon.
  • Keep dipping the spoon in the water and scoop more batter until the pot is full.
  • You may have to do more then one pot of dumplings.
  • Cook 1 or 2 minutes or until the dumplings rise to the surface.
  • Drain and keep warm.
  • Pour 1/2 of the melted butter over the dumplings so they won't stick.
  • Serve dumplings separately or put in stew or soup.

This is a wonderful casserole especially served with spatzle and cucumber salad (both recipes are on Zaar under separate postings. This is a really inexpensive dinner to make and very good. It is tastiest if you make it one day refrigerate it and then reheat in a 325F until heated through

Hungarian Rakott Kaposzta, Cabbage Casserole image

Steps:

  • In a large skillet, medium heat, fry the onions and garlic in the butter until golden.
  • Add caraway seeds.
  • Stir in the cabbage and mix well, add a few teaspoons of water and cook until the cabbage has just turned bright green.
  • Stir in the dill and half the paprika.
  • Place half the cabbage mixture in a 13x9" casserole dish, then put a layer of potato, cheese and apples.
  • Cover with remaining cabbage mixture.
  • Sprinkle with the vinegar and dust with the remaining paprika.
  • Bake covered for 45 minutes 325F oven.
  • Uncover and bake until the casserole is lightly brown, approximately 15 minutes.
  • Let cool for a few minutes and serve with sour cream or yogurt on the side.
