TAKI'S SARDINES: SARDELES TAKIS

Taki's Sardines: Sardeles Takis image

Steps:

  • Clean the sardines by cutting the heads and tails off with a scissors. Then, cut down the backbone to open the fish. Do not slice completely through. Remove the bone.
  • Coat the insides of the sardines with a covering of gray salt and close the fillet. Coat the outside with salt, and place in a shallow, small plate. Cover and place in the refrigerator for 12 hours.
  • Rinse well and slice in half to separate the fillets.
  • In a small bowl, whisk the lemon juice, olive oil, and oregano together. On a platter, lay the tomatoes out and place the sardine fillets on top. Pour the lemon mixture over the fish. Toss olives on top and serve with the rustic bread for meze.

2 pounds (about 16 to 20) small sardines
1 pound gray sea salt, dried and ground
2 ounces lemon juice (from about 2 lemons)
2 ounces olive oil
1 tablespoon finely chopped oregano
4 tomatoes, sliced
20 Kalamata olives, pitted
1 small loaf rustic bread, sliced

Steps:

  • Brown beef over low heat, break up into fine pieces. Drain.
  • Add beans, smash & mix into beef.
  • Add salt, chili powder, & 2 T of taco sauce; remove from heat.
  • Wrap tortillas in towel & microwave 20-30 seconds to soften.
  • Heat oil in deep fryer.
  • Spread meat mixture on center of each tortilla.
  • Fold tortilla over & press closed.
  • Drop each taco into hot oil & fry until crispy.
  • Drain cooked tacos on paper towels.
  • Open shells & add 1/2 slice cheese, lettuce, and taco sauce.
  • Spend next several hours on treadmill.

Steps:

  • thaw out frozen bread dough and let rise according to package.
  • Brown 2 lbs of hamburger and mix in seasoning according to package.
  • Roll out small balls of dough to about a 6 inch circle or about the size of a small tortilla shell.
  • Place a small amount of taco meat into the center of the dough and pinch shut into a taco shape.
  • Place into fryer and cook until golden brown. flip taco during cooking so both side cook evenly.
  • After frying add some extra meat, cheese and your favorite taco toppings. and enjoy

1 loaf frozen bread dough (thawed and raised)
2 lbs hamburger
2 packages taco seasoning
1 package of shredded cheese
all your favorite taco toppers
deep fryer or raised skillet for frying
oil for frying

Steps:

  • In a blender, combine the salsa ingredients; cover and pulse until salsa reaches desired consistency. Transfer to a large bowl; cover and refrigerate., In a large skillet, cook beef over medium heat until no longer pink; drain. Sprinkle with salt. Meanwhile, in another large skillet, fry tortillas in oil in batches just until crisp; drain on paper towels., Fill tortillas with beef; sprinkle with cheese. Fold in half. Serve with lettuce and salsa.
