Steps:
- Preheat oven to 400 degrees F (200 degrees C). Melt the butter in a 9x13 inch pan.
- In a medium bowl, stir together the sugar, flour, baking powder and salt. Add the beaten eggs and milk; mix well. Tilt the baking pan to coat all of the sides with butter, then pour the excess butter into the batter, and mix until combined. Pour the batter into the prepared pan.
- Bake for 15 to 20 minutes in the preheated oven. Serve hot.

- Cream the eggs, sugar, sour cream, almond, and ground cardamom.
- Sift together the flour, salt, soda, cinnamon and mix with egg mixture.
- Butter a tube or Bundt pan and sprinkle with granulated sugar.
- Pour batter into pan.
- Bake at 350° for 1hour or until toothpick comes out clean.
- Cool before removing from pan.
- Sprinkle turned out cake with powdered sugar.

- For layer cake, use three 9" round pans.
- Place greased paper in bottom of pans.
- Beat sugar, shortening and margarine until fluffy.
- Add egg yolks and vanilla; beat well.
- Combine flour, soda & salt in a separate bowl.
- Add alternately dry ingredients and buttermilk.
- Stir in coconut and pecans.
- Beat egg whites until stiff, fold into mixture.
- Bake in 350 degree oven for 30-40 minutes.
- Frosting: Beat 1/2 c margarine, 8 oz. cream cheese and 1 tsp vanilla. Add one box confectioners sugar, a little bit at a time, then add 1 tsp vanilla.

HEALTHIER BLUEBERRY SOUR CREAM CAKE
I baked this one sunday morning in Spring when I was craving baked goods but was looking to get rid of a few pounds. This cake is very moist and tastes great with salted butter and a cup of black tea. I use corn sugar to account for my fructose intolerance. Enjoy!

Steps:
- Cream butter and sugar.
- Add eggs one at a time, beating well after each addition.
- Add oil & vanilla sugar.
- Mix remaining dry ingredients together in a separate bowl.
- Add flour gradually to egg mixture, alternating with yogurt, ending with flour.
- Fold in blueberries.
- Pour into a greased loaf pan.
- Bake at 170C (~325 F), 40-50 minutes on convection, until a toothpick or sharp knife stuck in the middle of the cake comes out clean.
- Cool in pan for at least 10 minutes, then remove to rack for final cooling.
